Maple Monday! Maple Sweet Dumpling Squash

INGREDIENTS:
1 sweet dumpling squash
1⁄2 cup pure maple syrup
1 teaspoon cinnamon
1⁄4 teaspoon nutmeg
2 tablespoons salted butter

DIRECTIONS
Preheat oven to 350 degrees.
Cut the squash in half and remove seeds with a spoon.
Use a fork to poke several holes in the outside skin of each half of the squash. Place squash in baking pan with hollow side up. Add 1" of water to bottom of pan.
Place 1 tablespoon of butter, 1/8 teaspoon of nutmeg and 1/2 teaspoon of cinnamon in the hollow of each squash half. Pour 1/4 cup of maple syrup on each.
Bake uncovered on middle rack for 30-45 minutes or until the flesh is soft.
Serve hot. If using sweet dumpling squash, each half will serve one person and can be served with dinner "as is." Alternately, you may allow the squash halves to cool partially, remove the skins, and mash or puree the squash.

Maple Monday! Maple Glazed Pork Roast

Ingredients
½ cup (120ml) PURE maple syrup
1 teaspoon Dijon mustard
¼ teaspoon cinnamon
pinch of ground clove and ground ginger
1 (4½ pound) (2.04kg) boneless pork loin

Instructions
Preheat oven to 325℉. Combine the maple syrup, mustard, cinnamon, clove, and ginger in a small saucepan. Bring to a boil, then simmer for 3 minutes. Remove from heat.
Meanwhile, liberally season all sides of the pork loin with salt and pepper. Heat a 12" ovensafe skillet over medium to medium-high heat. Place roast fast side down in the skillet and cook until well browned. Using tongs, turn roast and brown on all sides. Pour maple syrup mixture over the roast.
Place skillet in oven and roast until meat registers 140℉. During cooking, rotate roast to coat in the glaze 2-3 times. Transfer to a cutting board to rest for 10-15 minutes before slicing. Slice in ¼" slices and serve with juices from the pan.

Notes
STORAGE: Store leftover meat in an airtight container in the refrigerator for up to 4 days. Reheat slices on the stove top in a skillet over medium heat covered with a lid for no more than 3 minutes.
TENDERLOIN: If you do use a tenderloin, it will cook much quicker!

Maple Monday! Maple Hot Chocolate

Ingredients:
1 Tbsp granulated sugar
1 tsp cocoa powder
1 Tbsp water
1 tsp butter
1 cup milk
1 tsp maple syrup
1 tsp vanilla extract
3 large marshmallows, cut into slivers
whipped cream

Instructions:
In a small saucepan on medium heat, mix all the ingredients together. Do not allow to boil. Remove from heat when the marshmallows are melted.
Pour into a mug, and top with whipped cream. Drizzle some extra maple syrup on top
