Around here, Christmas is all about food…well, a good chunk of it anyways.
Prime grade Prime Rib, Yorkshire pudding and all the fixings. But the Prime Rib was the star of the show..
Removed the bones, cut a roast to a manageable size, dry brined for 24 hours with salt, rosemary, sage and garlic.
Reattached the bones, placed some slivers of garlic inside the roast, smoked/grilled for 2 hours with hickory wood.

When your freezer dies and you gotta figure out what to do with all the meat. It was a quick dinner with a couple massive back ribs on the drum smoker, 3 hours hot and fast.
