A New Direction

As a former Marine Biologist who became an Oleologist, think sommelier for olive oil, it has been an incredible journey starting and growing The Unrefined Olive.

It has been a remarkable 13 years in the Glebe and 10 years in Kanata.

After much thought and reflection I have made the decision to sell The Unrefined Olive.

While I am making big changes personally I can assure you that The Unrefined Olive will have the same people and their smiling faces behind the counter at the stores; the knowledgeable and helpful customer service that you have come to expect, and of course an exceptional selection of olive oils and Balsamic Vinegars!

Thank you to everyone who helped me to create and grow this business. The connections I have made within our community and beyond, the friendships along the way, the collaborations throughout the years, and all of the shenanigans are priceless.

The new owner will introduce themself in the comming days. Needless to say you are in very good and capable hands.

Comfort Food for Cold Weather

Creamy Mushroom and Sage Pasta

Ingredients:
1 lb. Pasta, spaghetti or linguine
¼ cup Mushroom and Sage Olive Oil
½ white onion, chopped
1 lb. fresh mushrooms, sliced thin
1 garlic clove, minced
2 Tbsp Sherry Wine Vinegar (Optional)
1 cup heavy cream
1/4 cup parsley, chopped fine
Toasted Pine Nuts
Parmesan Cheese
Salt and pepper to taste

Instructions:
-Cook pasta according to package directions
-Heat Mushroom and Sage Olive Oil in large saucepan
-Add onion and mushrooms, cook 3-5 minute
-Add garlic and Sherry vinegar, cook an additional 2-3 minutes
-Add cream, salt, pepper, and parsley

Toss ingredients with cooked pasta, top with Pine Nuts, and generous amounts of grated Parmesan Cheese.
