An ode to the cheese
This might be a little cheesy but here we go.
Not that long ago is when we first met. Little did I know we would be on a 6 year journey together filled with ups and downs and everything in between. When we first met it wasn’t love at first sight. I was oh so curious about you and really had no previous knowledge of what you were all about. I would spend the next 6 years doing just that.
At the very beginning I found you to be quite complicated. You immediately began to challenge me in ways I have never confronted before. It’s in that moment you taught me patience and I realized without patience I would fail you. I quickly understood that you were in charge and that handling you was an incredibly huge responsibility, probably the biggest of my life. That part of you scared me, but slowly as we got to know each other more of those worries would eventually dissipate.
From week to week I loved being apart of your growth, and assisting you when you seemed to be struggling. Sometimes you came in confident and strong and other times you threw me curve balls and head scratchers.
Your aromas were strong at times. Some days the most beautiful, sweet aroma in the entire world and other days, whoa what a rush. I will never forget.
You melted hearts all over the Canada with your creamy, delicious, and salty characteristics. You were a part of weddings, get-togethers, menus and tastings, paired best with wine of course. You really made your mark and brought people together in the best way.
It is now time to say thank you. Thank you for teaching me these past 6 years about patience, understanding, science, and the artisan of it all. I have never felt more rewarded and appreciative in my entire life. I will never ever forget this experience and what I have learned and accomplished.
It is now time to say goodbye for now and hopefully see you soon.
