Grilled & Stuffed Feta Pepper 🌶

Cut the top of a bell pepper, removing the seeds and rinsing. Fill with Greek feta cheese, oregano, fresh basil, garlic, salt and black pepper.

Place pan on stove on medium heat, with Peter’s 100% Pure Extra Virgin Olive Oil in pan. Place pepper in pan and turn over every 4 minutes.

Drizzle balsamic vinegar on pepper, serve & enjoy 👨🏻‍🍳

Aglio e Olio (Spaghetti with Olive Oil & Garlic) 🇬🇷

Sometimes keeping dishes simple allows the ingredients and key herbs to speak for themselves and brings out their best flavours 🤌

4 tbsp Peter’s 100% Pure Extra Virgin Olive Oil
5 cherry tomato
1 red pepper
3 garlic cloves
6 basil leaves
1 tbsp Greek oregano
1 stick rosemary
2 tbsp Greek feta cheese
1 lbs Spaghetti
Salt & Pepper

Bring a large pot of cold water to a boil over high heat, then salt it generously. Add the pasta and cook, stirring occasionally until al dente, tender but not mushy, about 8 minutes.

While the pasta cooks, combine the garlic, olive oil, red pepper, basil, rosemary, cherry tomato, oregano, and salt & pepper in a large skillet and warm over low heat, stirring occasionally, until the garlic softens and turns golden, about 8 minutes.

Drain the pasta in a colander set in the sink, reserving about a 1/4 cup of the cooking water. Add the pasta and the reserved water to the garlic mixture. Mix well, then add feta cheese. Serve & Enjoy 👨🏻‍🍳

Start off with freshly-made Ciabatta bread, slicing in half. With a brush, spread Peter’s 100% Pure Extra Virgin Olive Oil over the bread. Slice 1 garlic clove in half, and gently rub the exposed side onto the oiled bread. Sprinkle grated Parmesan Reggiano over the bread and toast in the oven until golden brown 🥖

Combine chopped tomatoes, fresh basil, oregano, salt, pepper, and Peter‘s 100% Pure Extra Virgin Olive Oil in a bowl. Once bread is toasted, spread toppings on bread evenly. Serve and enjoy! 🍅

Classic Chicken Marsala with Peter’s World-Famous Caesar Dressing 🇮🇹

Chicken:
* 1/2 cup all-purpose flour (plain flour)
* 1 teaspoon kosher salt
* 1 teaspoon garlic powder
* 1/2 teaspoon black cracked pepper
* 2 large boneless skinless chicken breasts, halved horizontally to make 4 fillets*
* 2 tablespoons extra virgin olive oil, divided
* 4 tablespoons unsalted butter, divided
Marsala Sauce:
* 1 tablespoon unsalted butter as needed
* 8 ounces (250g) brown or Cremini mushrooms, sliced
* 4-5 cloves garlic, minced
* 3/4 cup dry Marsala wine
* 1 1/4 cup low-sodium chicken broth (or stock)
* 3/4 cup heavy cream (thickened cream, evaporated milk or half and half may also be used)**
* 2 tablespoons fresh chopped parsley
* 2 tablespoons Peter’s World-Famous Caesar Dressing

INSTRUCTIONS
Mix the flour, salt, garlic powder and pepper in a shallow bowl. Dredge the chicken in the flour mixture and shake off excess. Heat 1 tablespoon oil and 2 tablespoons butter in a 12-inch pan or skillet over medium-high heat until shimmering. Fry 2 of the chicken breasts until golden-brown on both sides (about 3 to 4 minutes per side). Transfer to warm plate, tent with foil and keep warm. Repeat the same with the remaining 2 chicken breasts. In the same pan with remaining pan grease leftover from the chicken, melt 1 tablespoon of butter. Add the mushrooms and for 2-3 minutes until browned, scraping away at any of the leftover chicken bits off the bottom of the pan. Add the garlic and cook until fragrant, about 1 minute. Pour in the Marsala and the broth and simmer until reduced by half and starting to thicken, (about 10-15 minutes). Pour in the cream and return the chicken back into the sauce. Cook until the sauce thickens (about 3 minutes). Remove from heat and mix in Peter’s World-Famous Caesar Dressing. Garnish with chopped parsley and serve immediately. (The sauce will continue to thicken off the heat.) Serve over cooked angel hair pasta (or pasta of choice), rice, potatoes, cauliflower rice or zucchini noodles, if desired 🇮🇹

Top Sirloin steak with crispy garlic, rosemary and Peter’s 100% Pure Extra Virgin Olive Oil is an absolute go-to if you’re looking to change things up from turkey for this holiday season 🎄

Rinse steak thoroughly and set aside. Dry with paper towel and season both sides with generous amounts of flakey salt and freshly ground black pepper. Set pan heat to medium and cover pan surface with a thin layer of Peter’s Village Olive Oil. Place steak onto pan for about 3-5 mins for medium rare, flipping each side when a golden crust has been formed. Add a drizzle of red wine as well to intensify the flavours already present in your Top Sirloin steak 🥩

While the steak is cooking, chop 4 garlic cloves finely and place into pan, along with two sprigs of fresh rosemary 🧄

When steak is finished, set aside and allow it to rest before cutting. Pick rosemary leaves and place them on top of steak. Finally, allow garlic to get crispy in the pan until placing onto the rest of your dish. This provides a great contrast of textures between the tenderness of the steak and the crispness of the garlic 🍽

The secrets to a classic Neapolitan Pizza Margherita 🇮🇹

🫓THE DOUGH
Make sure you’re using a high quality all-purpose flour that is freshly milled.
🍅THE SAUCE
Nothing tops San Marzano tomatoes when crushed along with fresh garlic, sea salt, dried oregano and Peter’s Village Olive Oil.
🧀THE CHEESE
When making this classic pizza, make sure to pick up a ball of fresh mozzarella and slice evenly to place on pizza. Aged Parmesan Reggiano provides complexity and can bring out all the various flavours of the pizza as well.

“Peter Bouzinelos left his home village of Koutsi in Greece in 1970 at a young age with plans to go to Canada to make a better life.

Upon arrival, Peter found a job making pizzas at a local pizzeria, where his passion for food began to rise. After 5 years, Peter decided to open up his own restaurant in Peterborough, Ontario; a small city located just an hour north of Toronto.

After choosing between multiple names, Peter finally decided upon The Pizza Factory to be the title for his new restaurant. At The Pizza Factory, Peter created many amazing homemade recipes, giving Peterborough a taste of his passion for food and quality service.

Among these recipes is Peter's now world-famous Caesar salad dressing. Customers would come in with their own jars and ask Peter and staff to fill them up with his homemade Caesar dressing. From that point, Peter and his family decided to begin production of bottling the Caesar dressing for patrons to take home to enjoy.”

Chicken souvlaki accompanied with Peter’s Tzatziki Dip and Greek vegetable stir fry 🇬🇷

For chicken:
Cut raw chicken breast into smaller chunk pieces and place gently through bamboo skewer. Place in container of Peter’s Village Olive Oil along with freshly chopped garlic, parsley, thyme, rosemary, and basil. Allow to rest for about 30 minutes. In the mean time, set your grill to medium heat. Once heat is reached, place souvlaki on grill, flipping sides every 3-4 minutes until browning begins. Once brown, gently brush souvlaki with Peter’s Greek Dressing, flipping over each side and brushing each time. After about 15 minutes of cooking, set to side to rest. To make sure chicken is fully cooked, cut through the largest piece to make sure it’s completely white in centre.

For vegetables:
Dice 1/4 red onion, 3 garlic cloves, 1 red pepper, 1 green pepper, and break 1 full head of broccoli. Begin by heating stir fry pan to medium heat, placing Peter’s Village Olive Oil in pan. Once heated, place peppers in and stir. Shortly follow with onions and broccoli. Season generously with salt, pepper and dried oregano, and finally add fresh garlic. Moments before plating, sprinkle a dash of Pinot Grigio white wine into your dish and allow to burn off for 30 seconds. Set dish aside and sprinkle Greek feta cheese on vegetables.

Plate and add Peter’s Tzatziki Dip on the side of your souvlaki. Dig in and enjoy 👨🏻‍🍳

Parmesan-Layered Chicken with Cherry Tomato Herbal Addition 🍅

1 chicken breast (6oz)
15 fresh basil leaves or 1 handful
1 large garlic clove
2 cups organic cherry tomatoes
Peter’s Village Olive Oil
Grated Parmesan Reggiano
Dried basil
Dried oregano
Dried Rosemary
Dried parsley
Dried thyme
Chilli flakes
Garlic powder
Sea salt
Freshly ground black pepper

Begin by fully cooking chicken breast by placing on grill for 10-15 mins using direct medium heat. Place to side when finished and allow chicken to rest. Pre-heat flat pan at medium heat and pour a generous amount of Peter’s Village Olive Oil onto pan. Once chicken is rested for about 5 mins, season heavily with spices and Parmesan Reggiano on both sides.

Place chicken into pan top down and allow to brown for 3 minutes. Meanwhile, chop your fresh tomatoes, basil and garlic finely and place into pan once chicken is ready to be flipped.

Flip chicken and place another layer of Parmesan Reggiano on top. Wait 2 minutes and flip again, and add another layer of cheese. This creates a crispy cheese crust around your chicken breast that will add amazing flavours and textures.

For added flavour, pour about 2 tbsp of pinot Grigio white wine or a white wine of your preference into dish and stir.

Once finished, plate and sprinkle parsley and Parmesan Reggiano on your dish. Enjoy!

Fresh Tomato and Herbed Ricotta Bruschetta🍅

1 pint cherry tomatoes
1 cup ricotta cheese
¼ cup finely chopped spinach leaves
2 Tablespoons finely chopped basil leaves
1 Tablespoon finely chopped chives
1 baguette French bread or similar artisan country bread, cut in ½ inch thick slices (8-10 slices)
2-3 Tablespoons Peter’s Village Olive Oil
1-2 garlic cloves, peeled and left whole
Salt and pepper to taste

Cut cherry tomatoes in half. Season with salt and pepper. Set aside.
In a small mixing bowl combine ricotta cheese, spinach, basil and chives. Stir to combine thoroughly. Set aside.
Toast bread, in a toaster or under the broiler in the oven ( or on the grill if you like), until golden brown. Drizzle or brush top side of toast with olive oil.
Assemble bruschetta by layering each piece of toast with ricotta mixture, and sliced tomatoes. Sprinkle with salt and pepper and garnish with snipped chives and chopped basil 🌿
