Picked up the next empty Bourbon barrel to be filled this week. This one is much larger than the last, an increase of 9 gal over 2025. We will have lots of yummy Bourbon barrel aged syrup in October.

Although the season has ended there is still lots happening at the sugar shack. Thanks to all the returning and new customers we've been busy bottling all your favorites. We have now created and bottled a smaller 250ml bottle of Dark grade Maple syrup available now for only $8. Not sure what real Maple syrup tastes like but want a try, looking for a gift for someone its the perfect size.

What a difficult but amazing 2026 season. Mother nature didn't provide the most consistent temperatures but when things where right the sap was flowing.

This year over 33000 L of sap was processed through the RO and evaporator resulting in the highest volume of syrup ever produced.

A total of over 480 L of syrup from all 4 grades, another new milestone for Monarch Meadows Maple. A few more things to put away and we wait again for 11 months.

Thank you to all the customers for making it possible to continue making delicious Maple Syrup.

They always say records are meant to be broken and this year is the year. How much more will be determined in the next week or two. Still have a limited quantity of 500ml Golden grade and full stock of Amber and Dark grades. Hopefully some Very Dark will deliver at the end of the season.

Ever wonder what it looks like inside the steam hood of the evaporator? Here is a little video of the fire in action, this is a raised flue pan so the fire travels down channels heating every sq inch making the most of the heat.

Processing another 1800 L of sap. A steady stream of delicious Maple Syrup. What grade do you think it will be?

The deep freeze is over and the flood gates have opened. In just the last 18 hours 1900 L of fresh sap from only 1/2 the trees.

2500 L of sap being processed today. The 1st boil of the 2026 season is underway. Looking forward to tasting some delicious Maple Syrup before the night is finished.

The taps started hitting the trees today, a beautiful sight to see in the lines. A few more really cold days and the lines will start to defrost again. Its officially the start of 2026 Maple syrup season.

Everything is grown or raised on our farms in Castleton and Colborne. Extras are provided by local makers in Northumberland County and Trent Hills.

Wow did the long range forecast change. The 2026 season will be getting underway sooner than I thought. Time to finish up the small things.
