We heard you loud and clear, Sip into Spring'ers! You asked, begged + pleaded for the recipes for our Mediterranean Farro Salad and Spring Spritz and we are finally delivering on our pinky swear promise.
Our goal was to highlight the fresh flavours of spring while showcasing the fact that we create both sparkling wine AND fortified wines here at the farm. We wanted to pull those bright citrus + herbaceous flavours from the white vermouth and echo them with the ingredients in this yummy, filling fresh salad. We hope you'll try making it at home!
Spring Spritz
In a wine glass filled with ice, add 1.5 oz Front Road Spirits' Dry White Vermouth and 4 oz Clink Clink sparkling wine. Top with a splash of grapefruit or lemon sparkling water, stir and garnish with a twist.
Mediterranean Farro Salad
Salad Ingredients
2 cup cooked and cooled farro (we used vegetable stock instead of water, you could also use quinoa, bulgur, orzo, etc)
1 sweet pepper, diced
1 English cucumber, diced
1/2 red onion, diced
1 can chickpeas, drained and rinsed
1/4 cup diced Pine River Tomato and Basil Cheddar from The Dover Cheese Shop 1/4 cup chopped pistachios (or walnuts, or omit)
1/4 cup chopped mint
1/4 cup chopped parsley
Dressing Ingredients
4 tbsp extra virgin olive oil
2 tbsp freshly squeezed lemon juice
1 tsp garlic powder
2 tsp sumac
salt and pepper to taste
Method
Combine and whisk all dressing ingredients in a large bowl. Add all salad ingredients. Toss to coat. Serve with a Spring Spritz.
