🐣🌿 Easter Sunday — April 5, 2026 🌿🐣

It’s Easter Sunday here at the shop — a day that tends to move a little slower, a little quieter. After the lead-up of the past week, today is more about puttering, visiting, and taking things as they come.

We’ll be open regular hours today (11–4), so if you find yourself needing something for the table, forgot an ingredient, or just want to add a little extra to your Easter meal — come on by, we’ve got you covered.

There won’t be any samples today… just a laid-back pace, a warm shop, and the usual open-door welcome.

If you’re out for a drive, visiting family, or just looking to get out of the house for a bit, swing in. The coffee is on, the conversation is easy, and it’s a good place to pause for a few minutes in the middle of the day.

🍁🐣 Sample Saturday — April 4, 2026 🐣🍁

Well… seeing as tomorrow is Easter Sunday, we thought we’d change things up a little this week. So instead of Sample Sunday, we’re doing a Sample Saturday.

There’s a bit of that quiet, pre-holiday feeling in the air today — a chance to get a few last things ready, slow down a little, and start thinking about gathering around the table with family and friends.

On the sample table today, we’re keeping it classic and seasonal:
🍖 Smoked Bone-In Ham
🍊 Finished with our in-house Maple Orange Glaze
🥕 Maple Orange Glazed Roasted Carrots on the side

This is the kind of meal that feels right for Easter — simple to prepare, full of flavour, and made for sharing. The glaze brings together that balance of sweet citrus and rich maple, and paired with the ham… it just works. We’ve included photos right here in this post so you can follow along and see exactly how it all comes together.

If you’re still planning your Easter dinner, there’s still time. We have Smoked Bone-In and Boneless Hams available, along with plenty of other options to help round out your table — from sides and extras to those little touches that make a meal feel complete.

🍽️ Sample Sunday — March 29 🍽️

Here we are at another Sample Sunday, and today we’re doing things just a little differently.

Laci has been busy in the kitchen working away on a scratch-made gravy — the kind that takes its time, builds flavour, and brings everything on the plate together. It’s something we’re looking to offer through the shop, but before we call it “finished”… we want your thoughts.

So today, we’ve built a proper plate around it.

On the sample table:

A classic Bangers & Mash, done the 53° North way. Simple, hearty, and all about comfort. This is the kind of meal that doesn’t need dressing up — it just needs to be done right.

This post is about $$ Money. Well.....Food, Mindfulness, and Money. While it may look like a post about chicken carcasses, its actually about so much more.

I have spent most of my adult life trying to navigate meal planning around a low income, so I am not new to tight budgets. First as a single mom, then as a farmer, and now as a business owner trying to keep prices reasonable without sacrificing any amount of quality. Its tough ! Everything is so expensive and there appears to be no end in sight to the rising cost of food.

In the kitchen I struggle with being broke, having the taste buds of a chef, and having the demands of a nutritionist.
Whats a girl to do ? Personally, I take a step back.... Waaaay back ! Past the farmer. Beyond the days of single mom workin' 3 jobs.
I go back to kitchen time with my Grandma's.
The war brides. The homesteaders.
They taught me to look at food and cooking from a different perspective. They showed me how to look at what I need (nutritionally) what i have available to me, and how to make the most from it.

Ok! now its about chicken carcasses. lol
We process a lot of chicken at 53°N and every week we are left with this hugely under appreciated food source, and with the whisper of grandmothers, we try not to waste anything. Around here we have used them for broth, feeding the dogs and the pigs ( yep! Pigs need protein too ) and coating them in herbs and spices, roasting in the oven, and turning them into a chicken soup my grandmas would be proud of.

We have a lot though. So if your up for some old school cookin', want to teach the kids how to make due, or just LOVE a hearty nutritional broth... come on up and grab a few bags. If you have not inherited the knowledge of kitchen magic, I would be honored to share what I know. We can grab a coffee and chat about how to make the budget work without sacrificing your culinary aspirations.

🌱🔥 Sample Sunday — March 22 🔥🌱

Well… Spring has officially sprung — about two days ago, right in the middle of a snowstorm. But hey, that’s the Cariboo. One day it’s snowing sideways, the next it’s melting off like nothing ever happened. The air feels a little softer, the days a little longer, and we’ll take that as a good sign of what’s coming.

Here at the shop, it’s another Sample Sunday, and today we’re keeping things simple, honest, and close to home with our **in-house fresh beef sausages**.

On the pellet grill today:
🥩 Beef Sausage — straightforward, classic, and full of flavour
🧅 Beef & Onion — hearty, familiar, and a customer favourite
🍇 Beef Blackberry & Sage — savoury with just a hint of sweetness to keep things interesting

🍀 Sample Sunday — March 15 🍀

Here we are at another Sample Sunday, and with St. Patrick’s Day just around the corner, we thought we’d lean into the spirit of things.

Today we’ve whipped up a batch of Irish Stew. It may not be green… but it does have Guinness, which surely counts for something. This hearty stew is loaded with beef, bacon, onions, mushrooms, carrots, celery, Guinness, and a blend of supporting spices that bring it all together into a proper comforting bowl.

We may also have a little experiment on the grill today — assuming the BBQ decides to cooperate. We’ll see how that unfolds as the day goes on.

And for those already thinking about firing up their own grills, our Maui Pork Butt Steaks are back in stock — marinated in our in-house Maui sauce and ready for your BBQ or oven. Big flavour, easy cooking, and a great way to bring a little sunshine to your dinner table.

The weather looks like a bit of a mixed bag — some sun, some cloud, and a little on the chilly side — but inside the shop it’s warm, the coffee is on, and the conversation is easy.

🔥 Sample Sunday — March 8 🔥

Here we are at another Sample Sunday, and today we’ve got something new coming out of the kitchen.

As we mentioned yesterday, we’re introducing Maui Pork Butt Steaks — marinated in our in-house Maui Sauce and ready for your BBQ or oven. Big flavour, easy cooking, and a nice change of pace for dinner.

We’re also trying out a little experiment and would love your thoughts. We’ve prepared some Souvlaki Marinated Pork Loin — a lean cut of pork paired with that bright, familiar souvlaki flavour many of you already enjoy in our chicken lineup. Simple, flavourful, and something we’re curious to see what you think of.

Both of these will be on the grill for samples today, along with plenty of other goodies in the shop to help set you up for the week ahead.

And guess what — blue skies and sunshine have made a guest appearance today. The weather is beautiful, the grill is going, and the coffee is on.

It also happens to be International Women’s Day, and we’d like to give a nod to the women who help make our little corner of the world what it is — Laci and Susan, whose hard work and creativity are part of the heartbeat of this place. And we’d also like to recognize Hayley, who spent a short but meaningful time working with us. Without her influence and the knowledge she shared, a few things around here would look a little different today.

We are making this post a little earlier then usual this time because we have been buzy buzy in the creative kitchen this week and are pretty excited about this one.
Spring is in the air and we are gearing up to launch some scrumptious new eats for the 2026 outdoor cooking season.

Here we are at another Sample Sunday… and yes, the pellet grill has been repaired. Again. 😄

The sun is making an appearance today, temperatures are supposed to climb all the way up to 6°C, and that’s all the encouragement we need. When the Cariboo gives you a little sunshine, you fire up the grill.

On the BBQ today we’re sampling a few of our marinated chicken favourites:

❄️ **Sample Sunday — February 22** ❄️

Well… this is the Cariboo.

Maybe this is winter’s last kick at the icicles. Maybe not. Either way, it’s -11°C at the farm this morning, and after I managed to break the BBQ (again) last Sunday… we’re leaning right into proper cold-weather comfort food today.

No grill. No tongs. Just soup. 🥣

Today we’re sampling:
🍲 Thai Chicken Soup — warm, fragrant, a little zing to wake you up
🥬 Cabbage Roll Stew — hearty, cozy, the kind of bowl that makes you settle in and stay awhile

If winter wants one more round, we’ll answer with ladles.

Here we are again — another Sample Sunday at 53° North Butcher Shop.

We hope everyone had a wonderful Valentine’s Day ❤️ and is gearing up for a great Family Day tomorrow. If you’re planning to gather around a table (or a grill), we’ve got a little inspiration for you today.

Since the weather can’t quite make up its mind… we’ve decided not to overthink it. Let’s fire up the grill again!

On the BBQ today: Chicken Kabobs
🍢 Souvlaki
🍋 Lemon & Herb
🥒 And of course, a cool, creamy taster of our house Tzatziki to go alongside

Who cares what the thermometer says? Seems like perfectly good BBQ weather to us. Besides — this is the Cariboo. The weather can change in a moment, so you might as well grill when the mood strikes.
