Peppermaster Steak Spice was developed in 1978 for the opening of The Appletree Landing Restaurant in Canning, NS. It was there over the next 17 years that I honed my skills at balancing fllavours and developing shelf stable sauces and spice rubs.
The Steak Spice is used in my personal kitchen to heighten flavour on all my grilled meats and seafoods, soups, stews and salads.
In this photo I have oiled a pan with olive oil, added sliced and seeded red jalapeños, placed some cream cheese or cheddar in each one, added sone avocado chunks, some leftover bacon, and of course the final touch, a good sprinkling of my Peppermaster Steak Spice.
450F oven for 12-15 minutes.

Le mélange d'épices « Peppermaster Steak Spice » a été créé en 1978 à l'occasion de l'ouverture du restaurant The Appletree Landing à Canning, en Nouvelle-Écosse. C'est là, au cours des 17 années qui ont suivi, que j'ai perfectionné mon art de l'équilibre des saveurs et que j'ai mis au point des sauces et des mélanges d'épices de longue conservation.
J'utilise ce mélange d'épices dans ma cuisine personnelle pour rehausser la saveur de toutes mes viandes et fruits de mer grillés, ainsi que de mes soupes, ragoûts et salades.
Sur cette photo, j’ai huilé une poêle avec de l’huile d’olive, ajouté des piments jalapeños rouges coupés en rondelles et épépinés, déposé un peu de fromage à la crème ou de cheddar dans chacun d’eux, ajouté des morceaux d’avocat, des restes de bacon et, bien sûr, la touche finale : une bonne pincée de mon assaisonnement pour steak Peppermaster.
Cuire au four à 230 °C pendant 12 à 15 minutes.

I noticed a new follower today and he lives on the North Mountain, Nova Scotia.
It got me thinking about all the places I have lived, because, 45 years ago I too lived on the North Mountain. Many miles away I was living in Baxter’s Harbour, just south of the local bootlegger…..
I think I will write a list of all the places
….wait a second. This is how you end up writing a book isn’t it? Yikes

Weather has disrupted pepper growing regions in California, Florida and Mexico
Making red jalapenos non-existant and similar peppers selling at 400% more.
We have a stash of fresh peppers, limes and lemon, and a freezer full of local peppers.
We zest fresh lemon to make flavoured salt for our spice rubs and dip mixes.

Les conditions météorologiques ont perturbé les régions productrices de piments en Californie, en Floride et au Mexique,
rendant les piments jalapeños rouges introuvables et faisant grimper le prix des piments similaires de 400 %.
Nous avons une réserve de piments frais, de citrons verts et de citrons, ainsi qu'un congélateur rempli de piments locaux.
Nous râpons le zeste de citrons frais pour confectionner du sel aromatisé destiné à nos mélanges d'épices et nos sauces.

Shrimp salad, Bahamian style, with an upgrade. This Canadian Twist is from my Caribbean roots on New Providence.
Hurricane Nassau, my beloved Pepper lime purée, for so many years eased my soul and pushed me to ever greater things, to be more alive.
I find joy in the simple things, like dinne, so I would like to share with you, tonight’s simple Peppermaster Shrimp Salad.

Une salade de crevettes à la bahamienne, revisitée. Cette touche canadienne s'inspire de mes racines caribéennes à New Providence.
L'Hurricane Nassau, ma purée de piment et de citron vert tant aimée, m'a apaisé l'âme pendant tant d'années et m'a poussé vers de plus grandes choses, à vivre plus pleinement.

So simple. So rich. So True.
Bring to a simmer chicken stock, roasted vegees, and sausage stuffed Tortellini.. Toss in 1/2T Peppermaster Island Jerk and 3 Shrimp per serving. Wait 30 seconds then serve.

We make a bunch of sauces for a restaurant chain. To get them to that ‘wow’ place one of my strategies was to replace all the water with a fresh vegetable stock made with carotts, onions, celery and loads of fresh ginger.
We strain the stock and have a bunch of pulpy vegetable fiber left over.
Any creative ideas out there on how to use this?
Chicken feed? Compost?
