Here’s a grilled Mexican street corn recipe for you to try, it’s simply delicious! 🌽

Ingredients
• ½ cup (110 g) finely crumbled feta cheese, plus more for serving

• ¼ cup (60 ml) mayonnaise

• ¼ cup (60 ml) sour cream

• ¼ cup finely chopped cilantro leaves and tender stems

• ½ teaspoon ancho or guajillo chile powder, plus more for serving

• 1 medium clove garlic, finely minced (about 1 teaspoon)

• 4 ears shucked corn

• 1 lime, cut into wedges

Directions:

1. Light your bbq (gas or charcoal). Preheat with the lid on for 5 minutes, then clean and oil the grate.

2. Meanwhile, in a large bowl, whisk together the cheese, mayo, sour cream or crema, cilantro, chile powder, and garlic until smooth. Set aside.

3. Once the grill is hot, place the corn directly over the hot side. Rotate occasionally until it’s cooked through and charred in spots—about 8 minutes total.

4. Transfer the corn to the bowl with your sauce and spoon it over the ears so they’re evenly coated. Sprinkle with extra cheese and chile powder, then serve immediately with lime wedges.

Here is a quick easy recipe for corn on the cob for this rainy weekend. We hope this can bring some summer inside!

Ingredients-
3 tablespoons of white sugar
2 tablespoon of lemon juice
3 ears of corn on the cob, husks and silk removed (or more depending on your party size)

Step 1-
Fill a large pot about 3/4 full of water and bring to a boil. Stir in sugar and lemon juice until sugar is dissolved.

Step 2-
Gently place the ears of corn into boiling water, cover the pot, turn off the heat, and let corn cook in the hot water until tender, about 10 minutes.

Step 3-
Butter and garnish with a little bit of salt and black pepper.

Enjoy!

From our family to yours, stay cobby!!🌽
