💛 A little mustard seed taught us a big lesson about quality…
A few years ago, we started noticing that something wasn’t quite right with our beloved maple mustard. The flavour was off, the colour wasn’t consistent, and the texture just wasn’t what we expected. The recipe hadn’t changed, so what was going on?
After lots of testing and research, we discovered the issue wasn’t our recipe, it was the mustard seeds.
Mustard seeds contain a natural substance called mucilage, which helps create that rich texture and consistency. The seeds we were receiving simply didn’t contain the level of mucilage our recipe relied on.
We switched to a more local supplier, and just like that, our Maple Mustard was back to being the product you know and love, maybe even better.
