Ten years in the bottle, and this is still one of the best glasses in the building.

This is the Incivility 2016 Pinot Noir, part of a slow decade long experiment to see what Niagara Pinot Noir can really do with extended bottle age. Hot, dry vintages with small, thick skinned berries are the ones built for this.

🍇 Veraison has begun in Susan’s Vineyard Pinot Noir.

This is when ripening begins and the berries soften and change from green to shades of purple. At this point, the vines begin directing more of their energy towards ripening the fruit. Sugar levels increase, acidity evolves, and the skins and seeds continue to mature.

For us great wine starts right here in the vineyard, with careful farming, patience, and respect for the vintage.
