Got some rhubarb in the garden and molasses in the cupboard? This gingerbread recipe is for you. 🩷 Thanks to Ann for sharing it with us.

1 generous cup rhubarb, cut into small pieces
1/4 cup organic sugar (12/22 or a little less?) (light brown would be fine)
2 Tbsp orange juice
2 eggs
1/ 2 cup canola oil
1/ 2 cup Crosby’s molasses
2 tsp. vanilla
2 cups flour (1/ 2 cup of it whole wheat)
3/4 cup organic sugar (see above)
1 tsp. baking powder
1/ 2 tsp. baking soda
1/ 2 tsp. salt
1 1/ 2 tsp. ground ginger
1/ 2 tsp. cinnamon
1/ 4 tsp. nutmeg

Preheat oven to 350F. Grease and flour an 8x8-inch pan.
Cook rhubarb with sugar and orange juice until very soft, and set aside to cool a little.
Meanwhile, in a large bowl blend all dry ingredients.
In a medium bowl whisk eggs, then whisk in oil, molasses and vanilla.
Stir slightly cooled rhubarb mixture into egg mixture; add this to dry mixture, blending well with wooden spoon.
Pour into 8x8 pan and bake until it tests done with a toothpick, about 35-40 minutes.

A big thank you to Heather Morris for sharing this Bushman Bread recipe that her family loves. 🍞 Molasses and cocoa give it that beautiful dark colour and rich flavour. We have a feeling it won't last long on the counter!

1 cup warm water
1 tbsp. active dry yeast
1 tbsp. sugar
1 ¾ cups whole wheat flour
1 egg
2 tbsp. butter, room temperature
2 tbsp. molasses
¼ cup honey
1 ½ to 2 cups bread flour
1 tbsp. baking cocoa
1 tsp. salt

Place warm water, yeast and sugar in bowl of a stand mixer. Allow to proof for 10 minutes (mixture will bubble). Add in whole wheat flour, egg, butter, molasses and honey and turn mixer on low, using the dough hook.
Add in 1 cup of bread flour, cocoa and salt and continue to mix on low. Gradually add in remaining half cup to one cup of bread flour. Dough should pull away from the sides of the mixing bowl. Continue to knead on low for about 10 minutes until dough is soft and elastic.
Turn dough out and roll into a ball. Allow to rise in a warm place, covered, for 60-90 minutes until doubled in size.
Shape as 6 small loaves on a cookie sheet or as 16 rolls in a 9x13 pan and rise again until doubled (45-60 minutes).
Bake at 350° for 25-30 minutes for loaves or about 20 minutes for rolls.

Quick Tip: This can also be made as dough in a breadmaker. Use the same quantities but add ingredients as per usual breadmaker recipes — liquids first, dry ingredients next, and bread machine or quick rise yeast on top. Less mess!
