This Week's Special: A midwestern "tavern style" pie based on some of my favorite hometown pizzerias. The crust is rolled and docked so that the pockets of air compress into a crispy, almost pastry like, crust. Classic toppings are sausage and/or black olives and fresh oregano, with a good amount of sauce and Grande mozzarella. The pie is cut into squares, making center pieces so good that they get fought over, keep it civil!!
This would be a great pie to add pepperoni, and to enjoy with one of our homemade herb dips.
Feeling wonderfully emotional about everything we've accomplished together with you all this season. Star Fire Pizza - Stella di Fuoco has over a thousand followers between platforms, and has made over a thousand pies this season! The collaborators that have come through have made us stronger, our pies tastier, and our imaginations infinitely hungry to keep learning and growing in bringing you the best pizza you've had in your life (something we keep hearing **blush** and we want that experience to only grow.
Thank you to everyone. I'll probably keep thanking everyone for the rest of October, because it's been a real community effort, and I want to thank more properly our workers, farmers, and producers in Maine and beyond. But more on that soon.
AND there are more collaborations to come before we're done. Next week's collab is a special one to me, and i'll post more about it on the weekend.
