Innovation is always in high gear at the Food Centre! To celebrate Innovation Week in Saskatchewan, we’re spotlighting one of the cutting‑edge technologies used in our facilities: microwave vacuum‑assisted drying.

Through our partnership with NuWave Research Inc., we’re applying this advanced drying technology across multiple agri‑food sectors, from fruits and vegetables to pulses and beyond.

Pictured here are Saskatoon berries and home‑grown carrots undergoing the process. Microwave vacuum‑assisted drying uses low temperatures to preserve nutrients, maintain vibrant colour and flavour, and enable rapid rehydration. THE RESULT: high‑quality, nutrient‑dense ingredients ideal for healthy snack development and value‑added food concepts.

Reach out to us to explore this innovative technology for your project needs.

In food processing, hazards can happen anytime. Is your team equipped with the right training and tools? HACCP training isn't just a regulatory requirement; it’s the foundation of a proactive food safety system.

Well-designed HACCP training helps organizations to:
• Build a clear understanding of hazard analysis and risk assessment
• Ensure Critical Control Points (CCPs) are correctly identified and managed
• Strengthen monitoring, verification, and corrective action practices
• Improve team competency and decision-making on the floor
• Support compliance with GFSI-recognized standards and regulatory expectations

High-performing manufacturing sites don’t just “have” HACCP plans - they ensure their teams fully understand and apply them every day.

At the Food Centre, we deliver practical, industry-focused HACCP training aligned with international standards and real-world operations. Our training is designed to build competence, confidence, and consistency across your team. Reach out to the Food Centre to get started! https://www.foodcentre.sk.ca/2-day-haccp-workshop/
