We have twins 👶👶

We finally bit the bullet 😏 and got a second Bullet.

The opportunity came up, volume has been increasing 🙌🏼, and at the time we still had no idea when the big fella was actually going to show up… so we figured two Bullets were better than one.

Naturally, shortly after that, we got the news: the big fella shipped. 🚢

He should be here by the end of October. Then comes getting everything hooked up, followed by Jeremy learning a completely different way to roast because this thing is a whole different animal.

So… assuming all goes according to plan, we’re hoping to have coffee roasted on the big fella ready for you to try by Christmas-ish?? 🤞🏼🤞🏼

We were originally given a delivery date of November 2025, so to say this has been a long time coming would be an understatement.

Anyway. Twins for now. Big brother incoming.

We got many requests for this one to be apart of our lineup. So here it is! Officially available on our website and at Gratitude Coffee.

We didn’t come up with this one…

This one started with our good friend The Booj over at Ahh Coffee in Ottawa.

He took our Banana and Spiced co-ferments, started playing around with them together, and landed on a blend that tasted way too much like banana bread to ignore. After testing it, his response was basically: this needs to be a thing.

We agreed.

A little tweaking later and voilà… “Banana bread at work, bro? Hell yeah!” was born. What started as Booj messing around with two coffees has now become a staple in our lineup.

We appear to have another very good Castillo.

Willian Ortiz took this one through oxidation, anaerobic fermentation and a hot/cold thermal shock situation.

All that carrying on got us:

Peach cobbler.
Caramel.
Orange zest.

Juicy, syrupy, very drinkable, and considerably more exciting than Castillo has any business being.

There’s a really distinct tea thing happening here. Bergamot, citrus peel and Lady Grey, rounded out by a soft honey sweetness.

Still unmistakably Gesha. Just coming at it from a different angle.

Orange Bourbon that actually tastes like orange…Convenient.

Wilton Benítez puts this one through a two-stage fermentation with select microorganisms, thermal shock, and a slow low-temp dry at his coffee farm/ laboratory. Would we expect anything less?

And somehow, after all that science, the thing that jumps out of the cup is exactly what it was named: Orange Bourbon, sweet, creamy and juicy orange.

Two-stage fermentation. Bioreactors. Thermal shock. A crazy amount of precision.

Papaya. Peach tea. Strawberry. C’mon.
