Summer soups are here and I'm kind of loving it!
Ok, I know that soup in the summer is not everyone's cup of tea, but hear me out.
Peak Ontario vegetables, seasoned with fresh garden herbs, slowly simmered into something comforting, flavourful, and surprisingly perfect for a rainy day, cool evening, or quick weeknight meal.
And let's be honest...our Canadian summers aren't always hot enough to put soup away completely. π
So! To capture the flavours of the season, this month's lineup features:
π§Ί πβ±οΈ Summer Saussage, Potato & Dill Soup: a summer BBQ version of loaded baked potato soup. Think Costco's honey garlic saussages on the grill with dill pickle potato salad. Russet and baby potatoes, garlic, onions, leeks, Baldersons double smoked cheese, chives and fresh dill!
π₯¦π§πΏ Broccolini, Cheddar & Chive Soup:Β a spring version of broccoli soup. Using broccolini, leeks, onions, garlic, potatoes, Baldersons aged cheddar cheese and fresh garden chives!
Soup also freezes beautifully, so if you feel strongly about canning and preserving Ontario's best throughout the year, stock up and tuck it in the freezer for another day. You'll thank yourself later!
