My name is Diego Jose Condesa, I'm 22 years old & currently living in Bowmanville, Ont& I love to cook! To me food is a language without boarders, it's one of the only things in my opinion that can tell you a whole story sometimes without any words needed.....
I have always had a strong connection with food, the complexities that food can be hiding sometimes through it's deceiving layers of won
derful flavours that leave you in mystery & its simplicity's, like fresh cherry tomato picked of the vine from your garden! Some of my youngest memories go to back the kitchen watching my parents cook, my Grandmother cook or just trying to jump in & help!! My Uncle in Uruguay is a Chef as well & sometimes he give me some of his some kitchen stories that left me thinking that it was the coolest job ever. I remember when I was 6 or 7 pretending to set up our old apartment kitchen like a restaurant & I'd do my best to cook a meal for family & pretend to be the chef & server!!! haha
I had worked at Wendys& done a bunch of dishwashing through high school but officially my culinary journey began 4 years ago when I went off to culinary school in Ottawa, shortly one semester in of school& a strike happen that closed the school for a couple of months. During that time off I got my first proper kitchen job& I came up with the most logical solution for my college problem to call my mom & tell here that I'm ...Dropping out!! So now fresh out collage, partially disappointed mother & only a quarter educated I started working full-time in the Byward Market at a place called Steak& Sushi(now closed)& Man oh man did that job change my life. I was there nearly a year the amount of knowledge & experience I gained was amazing & it only confirmed that this path I want to be going down is the right one! Since then I've been working at restaurants, moved back to Bowmanville, I worked at a restaurant named Tetras for a little while until November of 2018, that year I flew to Uruguay & spent 5 months in Uruguay& Argentina! I learned so much in my time in there, travelled around hostels exchange stay for cooking for the hostel staff & made so many amazing relationships! Tasted so many new ingredients that I never had before, not to mention that I feel like my connection to my background/culture has been made stronger! Shortly after coming back home I got my first job as sous chef at Northumberland heights & stayed there for a year and a half. Again just feed my hunger for culinary knowledge & passion for the culinary arts!! Unfortunately now like so many others in the service industry it has been nearly impossible to find steady work. So many small businesses are closing or can't afford to hire anybody & its just so sad! Me being the stubborn person I am! I really don't want to get a job in something that isn't my career path. So I decided to take it upon myself to feed you lovely people some lovely food! I wish I could be making so much more food or had a bistro but all in due time!! lol If you made it this far, thank you so much for taking the time to read this blurb of who I am & little about me!!
