I am a small home-based bakery providing goodies for Paleo, grain-free and gluten-free diets. I offer paleo muffins, breads, cereal, crackers and grain-free cookies as well as granola-type bars that I call Hunger Gap Bars. These bars come in a full paleo (no grains) or practically paleo option (contains some oats). These bars are filling and jam packed with wholesome ingredients such as hemp heart

s, chia seeds, almond or peanut butter, almond flour, pumpkins seeds, honey and more! Some items I am working on to add to the selection include:

I changed a few ingredients to avoid shopping
Eg used half the amount of date and replaced the rest with honey.

I have yet to try this recipe as a true grain free on by replacing the oats. I think coconut flour might seem b in nicely but not 1:1 ratio.

What are you having for supper tonight?

I tried to change things up tonight and went with Grain free quiche made with roasted broccoli, leeks, onions and mashed carrot topped with herb and garlic goat cheese. The crust is Paleo and can be found in one of my favourite Paleo cook books, Against All Grain, by Danielle Walker. It consists of almond flour, coconut flour, egg, ice water and a fat-I used ghee, but she calls for palm shortening. Served this with a ground turkey Paleo meatloaf topped with onions and mushrooms sautΓ©ed in ghee.

Dessert is a Paleo blueberry deep dish pie! Same pie crust as above but filled with Newfoundland blueberries, touch of honey, and arrowroot flour to thicken.

White icing is whipped coconut cream and berries used are strawberries, raspberries and local, hand picked Newfoundland blueberries from my freezer πŸ˜‹

My newest obsession, celeriac. This mild celery-like flavoured root vegetable adds some much more then you would think. Try this side dish and see for yourself!

Parsnip and celeriac purΓ©e:
300g parsnip, peeled and chopped
375-400g celeriac, peeled and chopped
Place parsnip in medium sauce pan filled with salted water. Bring to a boil over medium heat. Boil for 2 minutes then add celeriac and boil for another 8 minutes. Test with a fork for tenderness. The drain and place in a bowl/puree cup or back into saucepan. Add 60-75g of butter/ghee. If using unsalted butter/ghee then add 1/4 tesp of salt or herbamare. PurΓ©e. Add 2-3 of 2Tbsp of Epicure’s Sage and Apple stuffing or your own blend of sage and herbs. This recipe was adapted/inspired from

What's for Breakfast? When I first changed my diet and removed gains from it I found breakfast to be the hardest meal to adjust. I thought I loved breakfast foods before but now I love it even more. Mostly because the meal is fuel for my body and I feel it! No more bloating, fatigue, or sugar high and lows.
Here are a few items to try:

"No-Grola" this is granola without the grains (no oats, wheat or refined sugar). Remember to soak your nuts and seeds over night before consuming on a regular basis. Soaking makes them more digestible by removing the phytic acid and enzyme inhibitors from during the soaking process. Enjoy with fruit, over coconut yogurt, or by it self!

Eggs with greens and kimchi- if you haven't tried this you should...soon!

Fresh fruit, water or tea

Apple pie porridge with chia seeds. This is a beautiful alternative to oatmeal. It is slightly sweetened with dates (I usually omit the coconut sugar and only add two medjol dates) and oh so satisfying!

I tried MANY recipes before finding this one by Danielle Walker in her cookbook "Against All Grain"
I usually use cashews over macadamia nuts (due to cost but I hope to try it some day because inner it would be amazing!)
