A beautiful dessert is only what the customer sees. Professionalism starts with what they don’t see. 👩🏼‍🍳
There are a few rules in a pastry kitchen that, for me, are non-negotiable:

❌ Long nails & gel polish
❌ Rings & hand jewellery
❌ Loose hair
❌ Everyday clothes while working

Nails should be short, clean, and polish-free.

Hair should be fully tied back and secured.

Workwear should be clean and dedicated to the kitchen.
Hands and work surfaces should always be clean.

You can learn how to make a perfectly smooth cake and beautiful decorations. But true professionalism starts with hygiene, discipline, and respect for the people you’re baking for.

Three years ago, I came to Canada with just one suitcase.
I didn’t have a perfect plan, my own business, or ideal circumstances. But I had a strong desire to work, learn, and build a new life for myself.

We want to share the story of our café with you — without making everything look perfect.

Most of you know Denissoff for our cakes.
But behind the beautiful pictures, there has always been so much you haven’t seen.

Ideas that seemed brilliant… but didn’t work.
Decisions we had to change.

And things that turned out completely different from what we had imagined.
Like our beautiful black sign…

that somehow decided to glow green at night. 😅
That’s exactly why we created this page.

Here, we want to show you not only the desserts, the coffee, and the beautiful side of Denissoff, but also everything that usually stays behind the scenes.

How we come up with ideas for new desserts.
How we test them — and how they don’t always work out on the first try.

How we choose and develop our packaging.
What an ordinary day in our kitchen really looks like.
What we change in the café, what we experiment with, what we decide to let go of — and, of course, the mistakes we make along the way.

Not just the final result you see in our display.

While Sofiia is making a cake, let me tell you what she’s thinking about.

You should never compare your success to someone else’s, because everyone starts from a different place.

Some people are naturally talented, while others have to put in maximum effort just to achieve the same result.

Some people build their business honestly, step by step.
Others choose the easier way — deceiving people and making money quickly.

Some people enjoy success today, while others spend years building their name, reputation, and trust.
Some people start literally from nothing.

Others already have opportunities at the beginning that may take someone else decades to achieve.

And that’s exactly why you should never compare your results to someone else’s.

Everyone has their own path.
Their own pace.
Their own starting point.

And their own struggles that nobody sees.
The most important thing is to be honest with yourself:
Do I like the person I am today?
Am I following my own path?
Am I where I’m meant to be?
Because true success isn’t about being better than someone else.
It’s about becoming the best version of yourself.
