That’s a wrap! 🌮 Thank you for an unforgettable season.

Dear Friends,
As the temperature drops, the time has come for us to officially close the window on our 2026 food truck season.
We started this season with a simple mission: to serve up the most authentic, delicious Mexican street food in the area. Because of your incredible support, positive reviews, and constant energy at the window, we blew all of our goals out of the water. Whether you were a weekly regular or stopped by to try us for the first time, you are part of our family.

This Sunday October 18th will be our last day 🥺 for this Season at the taco truck. Come to the window and say goodbye 👋🏽…

What’s happening next? …. Well, we will have a couple weeks off 🤷🏽‍♂️.. and after that we’re gonna get everything ready for our grand opening day of the Tacos Tony Taqueria 🇲🇽 in Trenton!

Nixtamalization 🇲🇽
- an ancient Mesoamerican process where dried corn kernels are cooked and steeped in an alkaline solution. …..

In my own words. Nixtamalization … is the only process I know [and learned from my grandma] to get fresh corn tortillas 🤷🏽‍♂️..

I grew up in a rural town where people makes their own nixtamal every night before go to bed in order to be able to make their fresh tortillas next morning… for their husbands lunches that works on the sugarcane fields.

My Idea is… bring that Authentic Mexican tradition to Tacos Tony Taqueria…. This is not just an authentic process… this is something that only happens in the rural areas of my beautiful country 🇲🇽… and you’ll have the pleasure to have it…. In Trenton Ontario 🙏.

I can’t wait to Open…. I can’t wait to make the most fresh, delicious and authentic tacos you ever had!
