A little behind-the-scenes journey to one of Mississauga’s staple spots:

Leela’s Roti & Doubles.

Driving in, checking out the menu, and soaking in those incredible aromas. If you know, you know!

They were very kind to accommodate the dishes to be completely gluten free for the first year celebration and I'm definitely looking forward to it.

The menu will be:

GF Trinidadian chicken pelau - a dish made with rice, stewed chicken, carrots, peas, spices and coconut milk.

Curry chicken - seasoned chicken with savoury west Indian curry and potato

Curry chickpea and potato - known to Trini's as Chana and aloo, it's a vegan delight with chickpeas and potato perfectly seasoned with curry and spices.

Taking a quick step away from patties for something that came across in my feed. The first Sunday in June is recognized as National Cancer Survivor's Day. It is a day of celebration of life, and an opportunity to honour the dedicated health care teams who support Canadians diagnosed and in remission, as well as family and friends who support them all along the way.

I'm going into year 2 of remission and so far there are no signs of recurrence. I was diagnosed with ex-pleomorphic carcinoma, a cancer of the salivary gland in 2023. By summer of 2024 I had the tumor removed and radiation treatment for 6 weeks. Perhaps the most harrowing journey of my life.

I came out of treatment weak and tired but determined to overcome the adversity. I followed the guidelines of my oncology team to the tee, and prioritized rest and clean eating in the first 6 months of recovery.

By my birthday in March 2025, I was able to climb 1 flight of stairs without being wiped out. I realigned my mind to focus on wellness and positive affirmations. I remembered in the midst of my birthday weekend that I had a small business, and it was a pretty good idea. I went back into the kitchen and I was nervous. I was trying to remember how to do things, but I couldn't. I didn't give up and by May 2025, the rest is history.

I consider myself fortunate to be a survivor, and will continue to fight the good fight in memory of those who fell, and to those who are still fighting 💪

If I've learned anything in this journey, it's please get anything checked out as soon as you can. The diagnoses and treatments are more effective than we've ever known and it's giving us a chance to continue living a meaningful life.

Who says we can't have the viral beef patty pizza? It looks pretty good NGL, but if we can make authentic gluten free Jamaican patties, why not try the viral pizza, but make it gluten and dairy free.

It comes together really well. The curry and turmeric dough puffs nicely and gives it a nice cracker crunch. Drizzle some Coco Mango Rush and it's superb with the lactose free cheese. Tastes so good it will make you break out in a Spanish ballad of 90's sensation Jon Secada!!! 🔥🔥🔥

I like messing around with new and innovative ideas and this one was a cool experiment that was well worth the time. Down to try this out, let's take a vote.

I quietly celebrated the first actual year of Caribbean Gluten-Free on May 25th 2026.

This was taken on May 25th, 2025 at The Grain & Grit Brewery in Hamilton. It was my first actual pop up. I had a couple of dollar store tablecloths, some business cards, my phone was my payment terminal and my chafing dishes kept the patties hot. I was nervous as ever, but, I believed so much in my product that I was excited to share them with everyone. I had brought the hors d'oeuvres patties with me that day. About 50 patties or so I'd say and I actually sold out on my first day, before the end of the day at 5pm.

It was cool meeting fellow gluten free people like myself who came out to see me to try my patties and it was a very rewarding experience. I met a fellow cancer survivor that day too and will never forget embracing them after we shared stories.

This business is taking me on a journey of learning, growth, humility, and passion. The ability to learn and grow to help reach folks near and far, the ability to learn from my mistakes and always strive to improve, and the passion to continue bringing this gift to you all and rise above my diagnoses.

I'd like to celebrate in June with a birthday party. Some Trini food if it's ok, some good old school music, a bit of rum and a whole good ass vibe. Everything gluten free and it would be cool for my community to join me. Just a thought, but you know the universe manifests in ways we can't explain at times.

Today is Celiac Awareness Day, a day that hits incredibly close to home for me.

Back in January 2020, my world shifted when I was officially diagnosed with Celiac Disease.

Like anyone navigating a new gluten-free life, I quickly realized how much I missed the authentic flavors I grew up loving. The biggest heartbreak? Finding a truly viable, delicious, gluten-free Jamaican patty was next to impossible. The texture wasn't there, the pastry lacked that signature flaky golden magic, and the soul was missing.

So, I decided to fix it myself.

What started as an amateur quest in my own kitchen—messing around with alternative flours, testing spices, and trying to replicate that perfect, elusive crumb—has evolved into something I am incredibly proud of.

Today, it’s no longer just an amateur experiment. It’s a polished, premium, 100% gluten-free Jamaican patty that refuses to compromise on flavor or tradition.

But the best part of this journey isn't just perfecting the recipe; it’s the impact it has had on the gluten-free community. Hearing from fellow Celiacs and GF foodies who thought they’d never taste a proper patty again has been everything. Bringing that joy, safety, and comfort back to your tables is exactly why I do this.
