Easy Creamy Spinach & Garlic Stuffed Mushroom🧀🍄‍🟫

This stuffed mushroom recipe using Highline Mushrooms Organic Mini Bella mushrooms and Nuts For Cheese™ brand NEW Creamy Spinach & Garlic Cashew Dip just might be your new favourite side dish!

YOU WILL NEED:
10-20 Highline Mushrooms Organic Mini Bella mushrooms
2 tbsp plant based butter
2 cloves garlic, minced
½ medium onion, finely diced
½ tsp salt
1/2 cup Nuts For Cheese™ Creamy Spinach & Garlic Cashew Dip
⅓ cup roughly chopped pecans
⅓ cup nutritional yeast
Chopped parsley for garnish

HOW TO:
1. Heat the oven to 400°F. Lightly grease a baking sheet. Pull the stems out of the mushrooms and finely chop the stems. Set the mushroom caps aside.
2. Melt the butter in a skillet over medium heat. Add the chopped mushroom stems and cook for about 5 minutes, until most of the moisture has cooked away. Add the onion, garlic, salt, and pepper and cook another 1–2 minutes, until the onion is softened. 3. Transfer to a bowl and let it cool slightly.
4. To another larger bowl, add the your Nuts For Cheese™ Spinach & Garlic Creamy Cashew Dip, pecans, nutritional yeast, then add in the cooled mushroom mixture.
5. Spoon the filling into each mushroom cap, making a small mound. Arrange them on the baking sheet.
6. Bake for 20–25 minutes, until the tops are golden and the mushrooms are tender. Sprinkle with a little extra fresh parsley and serve warm.

They say when it’s your time to pass you’ll see 7-14 seconds of your life flash before your eyes, and I think this day will take up several seconds of mine. Carter, you truly are the best of me and my greatest blessing. I will never know what I did in a past life to deserve you. Just days before our wedding, we got our Binoo. And a year from now, we will have a 7 month old baby girl.

You somehow make me laugh even more now and I love you even more since this day. I am excited everyday for this story we are writing together!

WHAT SIZE IS MY BABY? WEEK 8 🫐🤰 (side note these were some of the best muffins I’ve ever made I want to try them with chocolate chips & different fruits!)

This was 10 weeks ago… 🥺 At 8 weeks pregnant, I was craving bakery-style muffins! Since baby was the size of a blueberry, I thought it only made sense to make homemade blueberry muffins using the local blueberries that were in season!

YOU WILL NEED:
2 cups all-purpose flour
2 tsp baking powder
½ tsp baking soda
¼ tsp salt
1 cup plain coconut yogurt
½ cup non-dairy milk
⅓ cup melted butter or olive oil
½ cup pure maple syrup
1½ cups blueberries (fresh or frozen)

HOW TO:
Preheat oven to 375°F. Line ine a 12-cup muffin tin.
In a large bowl, whisk together your flour, baking powder, baking soda & salt
In another bowl, whisk together your yogurt, milk, melted butter or oil and maple syrup
Add wet ingredients to dry ingredients and stir until just combined. Fold in blueberries.
Divide the batter among muffin cups, filling each about ¾ full.
Bake for 18–22 minutes, until the tops are lightly golden and a toothpick comes out clean.
Let cool for 5 minutes in the pan, then transfer to a cooling rack

These didn’t last long 🫢 but they were so perfect with an afternoon tea, I’ll be making these again this Fall very soon! 🍂

With the recent lettuce food safety concerns in Ontario, we know some of you may have questions about where your lettuce is coming from.

At the beginning of the recent lettuce outbreak, we were harvesting lettuce directly from our own fields here in Ontario every day. While our kale is still being harvested fresh from our fields, our lettuce is currently coming from Quebec, from farmers we’ve worked with for years.

Right now, we have beautiful, fresh romaine lettuce in the market, and we’re happy to know exactly where it’s coming from.

Local food is about more than fresh produce. It’s about knowing who you’re buying from! 🤍🥬

Officially in my second trimester so let’s celebrate by having a little beach day!🍑🌊🌞🐚 🤍

If my first trimester taught me anything, it showed me that I need to slow down, soak up the sunshine, and make intentional time to spend a few days somewhere peaceful (aka bring me to the beach, watch my nervous system relax and I’m a happy girl) 🌊 🌞

This season has me paying closer attention to the little things that help me feel my best and hydration is a very important part of it.
