Thai Basil! This herbs flavour is described as anise- and licorice-like and slightly spicy. It is more stable under high or extended cooking temperatures than that of sweet basil. Thai Basil can be used in many Asian recipes, my favourite way to have it is with a simple tomato salad. Microgreens Arugula! This microgreen is a good source of vitamin K and calcium. It is harvested at 2-3 weeks, compared to Arugula, which is harvested at 4-5 weeks. Amaranth! Amaranth microgreens are crisp, tender, and have a mild and sweet, delicate and earthy flavour. Amaranth contains: potassium, vitamins C, K, and E, zinc, manganese, beta-carotene, calcium, iron, and copper. It is best eaten raw, as it is too delicate for any heat preparations.
