Brent and his art have been a fixture at our market but it’s not too often anymore that he is there to chat with and make a deal with:) This Tuesday he’s going to get all his art out and put it on sale.

This is a great opportunity to find out more about the artists who he has sourced and his process around repurposing old windows and wood into frames.

I’ve got 4 great salads for you to try this week:

1.Green bean, tuna and cherry tomato salad
We had this one on our weekend holiday and it was amazing. Green beans lightly steamed, chopped tomatoes, and a can of tuna from Skipper Otto | Wild Canadian Seafood
Drizzle a lemon vinaigrette (with fresh garlic of course).

2. Roasted beet, fennel, apple and arugula salad
Roast some beets, slice some fresh honeycrisp apples, finely slice fennel, open up a bag of our arugula and dress with an oil and lemon juice vinaigrette.

3. Roasted potato salad
Roast some of our fingerling potatoes, dress with Kingfisher Farm Market Creamy Dill Dressing. Serve on a bed of lettuce.

4. Greek Pasta salad
Cucumbers
Tomatoes
Basil
Feta from Little Qualicum Cheeseworks
Sweet peppers
Green Goddess Dressing from us or your own greek salad dressing
Add a side of Kendall Ballantine chicken drumsticks

A bit of eucalyptus sap stings my eye
But I’m reaching down to find handfuls of plump tomatillos
Their paper swelling from their growth
And I hear others laughing as they fill crates with candy; (cherry tomatoes)
The dark poblanos make their debut
With sweet corn
Romaine lettuce towering in their rows
Tomorrow is market day 💐

It’s a fresh summer appetizer you don’t want to miss. We grow shish*to and padron peppers which our both “tapas roulette” dishes; where you never know if you’ll get a hot one or not. Shish*to originate in Japan while Padron peppers from Spain. They are distinct in flavour yet the way they are enjoyed is the same.

Fry them in a cast iron pan with a little oil until they blister and char slightly. Toss in some salt and serve. I love to have a chipotle dipping sauce or garlic aioli.
