If you’re bringing the salad to Thanksgiving, bring THIS one. 🍐🥗

Because between the turkey, stuffing, mashed potatoes and gravy, something fresh on the table just hits differently. 🙌

This Pear, Grape, Feta & Candied Pecan Holiday Salad has a little bit of everything: sweet pears and grapes, salty feta, crunchy pecans and a Honey-Dijon C***r Vinaigrette to bring it all together.

Serves 6–8
For the salad:
🌿 6 cups baby arugula or spring greens
🍐 2 ripe but firm pears, thinly sliced
🍇 2 cups red grapes, halved
🥜 1 cup candied or plain pecans, roughly chopped
🧀 ¾ cup crumbled feta
🧅 ⅓ cup very thinly sliced red onion
🌿 Fresh thyme leaves, for finishing
For the Honey-Dijon C***r Vinaigrette:
🫒 ¼ cup extra-virgin olive oil
🍎 3 tbsp apple c***r vinegar
🍯 3 tbsp honey
🥄 1 tbsp Dijon mustard
🧄 1 small garlic clove, finely grated
🧂 Kosher salt + freshly cracked black pepper

Here’s how to make it:
1️⃣ Whisk together all of the vinaigrette ingredients until emulsified.
2️⃣ Arrange the greens on a large platter. Layer the pears and grapes throughout, then scatter with feta, pecans and red onion.
3️⃣ Drizzle with the vinaigrette just before serving and finish with fresh thyme leaves.

And just like that, the Thanksgiving salad is officially not an afterthought. 😍🍐

You won’t believe how easy this Turkey Breast Roast is. 👀🦃

Hosting a smaller Thanksgiving gathering? Save this recipe. You still get a beautiful turkey centrepiece on the table, without having to cook and carve a whole bird. 🙌

And just wait until you slice into that stuffing centre. 😍

Here’s how to make it:
Ingredients:
🦃 1 Meridian Turkey Breast Roast, 5–6 lb (serves 10–12)

🫒 ⅓ cup Meridian Olive Oil + 2 tbsp for the pan

🌿 Meridian Turkey Rub, salt & pepper

🌿 Fresh rosemary, sage & thyme, plus extra for garnish

🧅 1 onion, sliced

🥕 Carrots + celery, sliced

💧 ½ cup water or chicken stock

❤️ Fresh cranberries, for garnish

Method:

1️⃣ Preheat oven to 350°F.

2️⃣ Rub the Turkey Breast Roast with olive oil, Meridian Turkey Rub, salt and pepper.

3️⃣ Add 2 tbsp olive oil, sliced carrots, celery, onion and fresh herbs to a baking dish. Arrange them as a bed for the roast to sit on, allowing air to circulate underneath.

4️⃣ Pour ½ cup water or chicken stock into the baking dish to help keep the roast moist while cooking. Place the roast on top of the vegetables and herbs.

5️⃣ Roast for approximately 50 minutes per kg, until the internal temperature reaches 170°F. If the skin is dark enough partway through cooking, loosely cover with foil. Broil briefly at the end only if the skin needs extra crisping.

6️⃣ Rest for 10 minutes, remove the netting, and garnish with fresh herbs and fresh cranberries. Slice and serve with cranberry sauce and gravy.

Easy to prep. Simple to carve. And just the right size for a smaller Thanksgiving gathering. 🦃✨
