Borscht has very old Eastern European roots and is most strongly associated today with Ukraine. Despite how people often picture it now, the earliest form was probably not the bright red beet soup most people know. The name is thought to come from an old Slavic word linked to cow parsnip / hogweed, a plant once used to make a sour soup or fermented base. Over time, beets replaced hogweed, and that later beet-based version became the classic borscht recognized around the world. 

As the dish spread, borscht developed into many regional styles across Eastern Europe. Some versions are meat-based, some vegetarian, some served hot, and some cold. What stayed consistent was the idea of a hearty, slightly tangy soup tied to home cooking, family traditions, and seasonal ingredients. UNESCO describes Ukrainian borscht cooking as a living tradition with many versions depending on recipe, method, and occasion. 

A major modern milestone came on July 1, 2022, when UNESCO added the culture of Ukrainian borscht cooking to its List of Intangible Cultural Heritage in Need of Urgent Safeguarding. That recognition focused on the cultural tradition of borscht in Ukraine and its importance to identity, family life, and community.

Plov is the Central Asian branch of the broader pilaf/pilau family of rice dishes. Its deeper roots go back to the spread of rice from South and Southeast Asia into Persia and neighboring regions, while cooking methods close to modern pilaf became widely established across the Islamic world during the Abbasid period. The exact birthplace of plov is still debated, but historians generally place its development somewhere in the Persianate and Central Asian cultural sphere rather than in one single modern country.

“Cheburek” is basically the name of the dish, not a person or place. The word is generally traced to Crimean Tatar — usually given as çiberek / çüberek — and then it spread into Russian, Ukrainian, and other languages in slightly different spellings. In English, cheburek usually comes through the Russian form. 

As for why it’s called cheburek, the second part is connected to börek/burek, a broader family of filled pastries across Turkic and nearby cuisines. Some sources simply explain the name as “meat pie,” while others break it down more literally as something like “pie with chopped/raw meat.” So the idea is basically: a meat-filled pastry.

Uzvar is a traditional Ukrainian drink made from dried fruits, and it became especially important as a winter and holiday drink because people could dry apples, pears, plums, cherries, and berries after harvest, then use them months later. It is strongly associated with Ukrainian Christmas Eve (Sviat Vechir) and is often served alongside kutia as one of the ritual foods of the holiday table. 

The name “uzvar” comes from the Ukrainian verb family related to варити / заварити — “to boil,” “to brew,” or “to scald/infuse.” That fits the classic method: the fruit is often lightly boiled or just brought to a boil and then infused, rather than heavily cooked. Older variants of the name also existed, including var and zvar.
