The Night Baker is from the cookie-loving minds of Toronto baking duo Mitch and Leanne. Chemists turned night-time bakers and food lovers through and through. We make new recipes based on things we like to eat, things we grew up with and our experiences from travelling in wonderful places with delicious foods. The Night Baker's Desserts June 2-14 🇵🇭

It's Filipino Heritage Month and for the month of June, we're celebrating with some of our very best cookies on the menu. These are cookies inspired by food we grew up with in the Philippines and we hope you all get to try and enjoy them ☺️

Brand new this week is our Cornbread Bibingka. Bibingka is a Filipino rice cake with coconut milk that's traditionally cooked in a palayok or ceramic pot over an open fire. It's topped with butter, sugar and cheese and is a Christmas time favourite dessert for many Filipinos.

We brought the same concept for the Summertime by transforming our Bibingka into a Cornbread cookie 🌽

We make our Cornbread with coconut milk, bake over banana leaves and top with the same butter, sugar and cheese topping for Bibingka. It's soft, fluffy and might just be your new Summertime backyard favourite cookie 🥰

This week, we are also back to Scarborough on June 6-7 for Pinoy Fiesta at the Albert Campbell Square behind STC. We will be joined by our friends with THE BEST Silvanas and cookies from yours truly.

Silvanas are again sold-out at our bakeries but we're working to get them restocked soon.

Didn't get to post a write up about one of our newest cookies the Black and White Crunch (TNB # 113) so thought to do so before they finally leave our menu.

The Night Baker's Desserts May 19-31 🇵🇭

We are continuing Asian Heritage Month with a brand new cookie inspired by a Filipino pasalubong favourite.

Our newest cookie the Caramel Peanut Tart is inspired by the Yema Boat Tart, a boat shaped tart that's topped with a yema caramel and nuts. Depending on your province, the yema is mixed with either peanuts, pili nuts or cashews in the tart to create a sweet and chewy tart.

We use salted peanuts to create a sweet and salty cookie. It takes us back to life in the Philippines and the joys of giving (or receiving!) this treat as pasalubong. Masarap! Delicious!

We also have the Ube Tiramisu back at our bakeries along with the Milo chocolate lava filled Milo Cyrus.

Also returning is our very popular Mistachio, made with premium Japanese matcha, white chocolate and pistachios.

Both our Ube Cake Cups and Silvanas from are currently sold-out but we are hoping to have them back at some point later in the week.

Introducing TNB # 114 Caramel Peanut Tart

Inspired by the Filipino pasalubong favourite the Boat Tart, it's made with a yema and salted peanut caramel that's paired with our pie cookie dough.

This is a dessert that takes us back to visiting the probinsya or provinces in the Philippines and bringing back these sweet treats back home as gifts to our friends and family.

Sweet, salty and chewy. Masarap! Delicious!

There will be lots of food, crafts and treats from local Asian owned businesses all night long.

Our bakeries are currently sold-out of Silvanas but we will be having some more flavours available which include Calamansi, Mais con Yelo, Matcha and our usual Ube Latte, Yema and Pistachio Silvanas.

Exclusive to the market this weekend are our Ube Tiramisu cookies and we will also have our very popular and not too sweet Dubai Chewy Cookies along with a selection of our current cookie menu.

The Night Baker's Desserts May 5-17 🌙

Happy Asian Heritage Month!

This month we'll be showcasing flavours from all over Asia with our desserts and cookies.

We have two BRAND NEW cookies this week, the Thai Tea Pastillas (TNB # 112) and the Black and White Crunch (TNB # 113).

The Thai Tea Pastillas cookie combines two flavours from South East Asia with our Thai Tea infused milk cookie and our Filipino Pastillas milk candy filling.

For our Black and White Crunch cookies, we take inspiration from the NYC staple black and white cookies but translate them into Asian flavours by using Black Sesame instead of chocolate. We also added a crunchy filling with the black sesame toasted kataifi. Like a lot of Asian desserts, it's a play on sweet and savory, soft and crunchy and just delicious.

We also have THE BEST Silvanas from our friends but as usual, they are going again fast. We have the Ube Latte, Yema and Pistachio as our Silvanas flavours.

For the next 2 weekends we are also bringing back our not too sweet Dubai Chewy Cookies at the Asian Heritage Month Celebration at Mel Lastman Square on May 9-10 and the Asian Night Market at Stackt market on May 16. They will be available exclusively at those two events.

And finally, we have gelato from our friends available again at our College and Danforth bakeries. We have the brand new Ube Pie gelato available at both locations. Smooth, not too sweet with real Ube flavour 💜

SPRING FESTIVAL SEASON IS HERE!

Please join us this weekend May 9-10 for an awesome start to the Spring/Summer Festival season with the Asian Heritage Month Celebration at Mel Lastman Square!

Hosted by .welcome.market and Councilor , this has been and continues to be one of THE signature festivals in Toronto.

We're again joined by our friends with Cookies, Silvanas and exclusive to this market, the return of our very popular and not too sweet Dubai Chewy Cookies.

We were actually here just as customers and event goers last year (see last pic) visiting our friends Chermaine and Parley while taking in all the sights, foods and sounds and we really loved the energy of the festival and how everyone came out to support local Asian owned businesses. We honestly had a little bit of fomo so we're so happy to be joining this year!

There are 90+ (!!!) local businesses participating this year and we hope to see you all there!

Cookies this week April 28 - May 3 🌙

Every time I'm at the bakery lately I find myself taking a bite of our newest cookie the Jamdesal. I just love the contrasts in textures with the crunch of the Pandesal toast and the softness of the cookie itself along with the sweet and salty of the jam and Miso. Delicious 😋

It's our take on the Jam on Toast cookies but with a Filipino twist and they're only guaranteed to be around til this week. We hope you get to try it!

Also around this week are our very popular Tiramisu cookies. We've had them on rotation on and off our menu for a few years now and I'm always surprised at how good they are. I know I shouldn't be at this point bec we do make them lol but it is very popular for a reason. It's something an actual Italian nonno has tried and approved which still makes me very happy 😊

For our other desserts, Tito Parley's Silvanas have just been restocked at North York and we'll have them back again at our Danforth and College bakeries very soon.

We will also be restocking our very popular Ube Cake Cups at some point this week. We've been selling out of them weekly, restocking, then only to have them sell out again by end of day 🫣 We'll have them back by Friday we promise!

The Night Baker's Desserts April 21 - May 3 🌙

Did someone say Jam on Toast cookies?!

The viral cookies that have been taking over our feeds has finally arrived at The Night Baker! We've been seeing this cookie recipe over and over and since we haven't seen any bakeries make it yet in Toronto, we thought we'd make our own version.

But to make it truly us, we put our own Filipino twist on it and decided to make it with THE quintessential Filipino bread, the Pandesal.

For our cookie, we used a Jam on Pandesal toast crumble on top of a miso and white chocolate cookie. Happy to say the hype is worth it. Crunchy, soft, sweet and salty. Delicious!

Also back at our bakeries are Silvanas from . We *just* restocked them and they are already selling fast yet again (tysm!). We currently have Ube Latte, Yema and Pistachio Silvanas available at our bakeries.

Speaking of popular desserts, our Ube Cake Cups have been very very popular over the past weekends and have been selling out almost as soon as we restock them 🫣 Our teams are working very hard to make more this week and we will be restocking them again very soon at all locations.

NEW COOKIE 🍓🍞🇵🇭🍪

Introducing TNB # 111 Jamdesal

There's this viral cookie recipe that recently went all over our feeds recently with a Jam and Toast cookie.

The most popular version involves actual Jam on Toast as a crumble on top of a miso cookie.

We haven't seen any bakery in Toronto make it so we thought we'd try to make our own version, The Night Baker way. And we are most happy to report, it is DELICIOUS.

For our version, we wanted to put our own Filipino twist on it so instead of regular toast, we opted to use Pandesal for our topping.

Pandesal is a Filipino bread that's akin to a butter roll and mostly enjoyed during breakfast. Each Filipino has their own special way to enjoy Pandesal, whether with Lily's peanut butter (me), with jam, cheez whiz or other spreads, dipped in coffee or enjoyed piping hot on its own.

It's a truly quintessential Filipino food and we're so happy we can finally feature it on a cookie!

Our Jamdesal cookie also has a miso base that's mixed with white chocolate. It's then topped with Raspberry jam and our own special Jam on Pandesal crumble. The miso cookie pairs really well with the Pandesal and Jam for a salty and sweet combo. The crumble topping also adds a nice crunch to the soft miso cookie making for a unique and delicious cookie 🥰

Our new Jamdesal cookies will be available starting tomorrow Tuesday freshly baked at all our bakeries. Also available for GTA delivery and Canada-wide shipping through our website at thenightbaker.com 🌙

The Night Baker's Desserts April 9-19 🌙

New cookies are here!

New to our menu is TNB # 110 Coffee Cake ☕️🍞

It's a crunchy espresso cinnamon cookie with housemade vanilla coffee cake crumbles on top.

Also back are our very popular Dubai Brookies. They are topped with a luscious chocolate ganache and filled with our housemade Pistachio Kataifi. We use our own housemade Pistachio cream which makes our filling not too sweet and packed with real Pistachio flavour. So yummy!

Our Ooh Bae Dream Cakes are SOLD OUT again this week tysm! Our pre-orders open every Sunday by 12pm for pickup on Saturdays at our bakeries. They are made with our original Ube Custard and to us really give you the real Ube taste we know and love from growing up in the Philippines.

And finally, our Ube Cake Cups will be back sometime this weekend. They are very very popular so we're having a hard time keeping them stocked. Look for them to come back on Saturday.

Hi friends!

We just wanted to thank you all for including us in your Easter celebrations this past week. This was probably one of our busiest Easter weekends ever and we are so grateful ❤️

Even though we already have 3 bakeries, we're still a small family owned business with a small but very mighty team. We ourselves had a lot of long days and nights this past week but seeing all of you enjoy our cookies, Ube cakes and our friends' Silvanas from Tito Parley's makes it all worth it. Thank you!

We are a proud Filipino-Canadian owned bakery and even prouder that after 7 years and counting, we're still able to share our treats with all of you.

So we've had a busy weekend 😅

We had a few call outs and a very busy weekend so we're running short on a few desserts.

We are open today from 10am-5pm only and you will still have most cookies available but some are already SOLD OUT, including Ooh Bae Dream Cakes, Ube Cake Cups and Silvanas.

Honestly been getting home past midnight every night the past few days but we still really appreciate all the support.

Thank you so much for including our bakery in your Easter celebrations.
