Our twice-baked honey almond spuds are the perfect comfort food for any occasion.

Twice Baked Honey Almond Sweet Spuds
Yields: 6 servings Prep time: 30 minutes Cook time: 1 hour

Ingredients:
6 large sweet potatoes
1/2 cup butter, melted
1/2 cup brown sugar
1/4 cup maple syrup
1/4 cup chopped Planters Raw Almonds
1/4 cup marshmallows
1/4 teaspoon cinnamon
1/4 teaspoon nutmeg

Instructions:
Preheat your oven to 400°F (200°C).
Pierce the sweet potatoes several times with a fork. Place them directly on the oven rack and bake for 45-60 minutes, or until tender.
While the sweet potatoes are baking, combine the melted butter, brown sugar, maple syrup, Planters Raw Almonds, marshmallows, cinnamon, and nutmeg in a bowl.
Once the sweet potatoes are tender, cut them in half lengthwise and scoop out the flesh. Mash the sweet potato flesh in a bowl.
Add the sweet potato filling to the mashed sweet potato and mix until well combined.
Stuff the hollowed-out sweet potato shells with the filling.
Return the stuffed sweet potatoes to the oven and bake for 15-20 minutes, or until the filling is bubbly and golden brown.
Serve immediately and enjoy!

Warm up with our cozy cashew carrot and ginger soup, perfect for a fall day!

Cashew Carrot and Ginger Soup
Yields: 4 servings Prep time: 20 minutes Cook time: 25 minutes

Ingredients:
1 tablespoon olive oil
1 onion, chopped
2 carrots, peeled and chopped
1-inch piece of ginger, peeled and grated
4 cloves garlic, minced
4 cups vegetable broth
1 cup Planters Unsalted Cashews + 2 tbsp to garnish
1/4 teaspoon red pepper flakes (optional)
Salt and pepper to taste

Instructions:
Heat the olive oil in a large pot over medium heat.
Add the onion, carrots, ginger, and garlic to the pot and sauté until softened, about 5 minutes.
- Stir in the vegetable broth and cashews. Bring to a boil, then reduce heat and simmer for 20 minutes, or until the vegetables are tender.
- Puree the soup using a blender or immersion blender until smooth.
- Stir in the red pepper flakes (if using), salt, and pepper to taste.
- Garnish with Planters Unsalted Cashews.
- Serve hot and enjoy!

Cute and delicious? Try these peanut butter cookies for your next halloween bash. They’re sure to be a hit!

Peanut Butter Spider Cookies (Yield: 12 cookies)
Prep time: 30 minutes Cook time: 8-10 minutes

Ingredients:
3/4 cup (1.5 sticks) unsalted butter, softened
3/4 cup granulated sugar
1/4 cup packed brown sugar
1 large egg
1/2 teaspoon vanilla extract
2 cups all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1/3 cup Planters smooth peanut butter
12 mini peanut butter cups, unwrapped
Black icing
Candy eyes
Small piping bag

Instructions:
- Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
- In a large bowl, mix together the softened butter, granulated sugar, and brown sugar until light and fluffy. Beat in the egg, then stir in the vanilla extract.
- In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry and wet ingredients, mixing until combined.
- Add the peanut butter to the dough and mix until well incorporated. Chill the dough in the refrigerator for 20 minutes.
- Roll the chilled dough into 1-inch balls. Place the cookies on the prepared baking sheet, leaving space between them.
- Place cookies in the preheated oven for 8-10 minutes or until golden brown. Let them cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
- Using black icing, pipe legs and place candy eyes onto each cookie to create spiders. Place a mini peanut butter cup in the middle of each cookie for the spider’s body.
- Serve and enjoy your homemade peanut butter spider cookies!
