CABBAGE ROLL SOUP
Cabbage rolls are wonderful. I am on a mission to use this NEW tool for everything!
Making 20 little cabbage rolls on a weeknight is a completely different conversation.
So here’s the answer: Cabbage Roll Soup!
Brown 1 lb ground beef with 1 small diced onion. Drain excess fat.
Add 2 minced garlic cloves and 4 cups chopped cabbage.
Stir in:
• 1 can (14.5 oz) diced tomatoes, with juices
• 1 can (15 oz) tomato sauce
• 3 cups beef broth
• ½ cup uncooked long-grain white rice
• 1 tbsp Worcestershire sauce
• ½ tsp paprika
• ½ tsp black pepper
• ½ tsp salt
Cover and simmer for 25–30 minutes, until the cabbage is tender and the rice has soaked up some of that delicious tomato-beef broth.
Nothing gets rolled.
Nothing gets stuffed.
Nothing gets fussed over.
But every spoonful still has the beef, tender cabbage, rice and rich tomato flavour that makes old-fashioned cabbage rolls so good.
Basically, it’s cabbage rolls after somebody finally decided to stop doing all that work.
