And the Ugly Delicious continues with a little bit of Jamie Oliver thrown in. My daughter helped me make veggie dumplings and I made traditional pork dumplings. I pan fried these babies and made soup to go on the side. Labour 8ntensive but totally worth it!

On the menu for lunch today..jazzed up some leftover stir fry rice with some avocado and kimchee....Yummy!

So during quarantine, like a lot of people out there, I am crushing Netflix. One series in particular is "Ugly Delicious". I find it inspiring, fascinating and enlightening. Almost every time I watch it, I want to cook what they have been discussing. So along this vein, I am venturing down the fried chicken route. Tonight, I am marinating chicken pieces overnight in a buttermilk brine. Stay tuned for my results tomorrow!

First post in forever! I am doing a lot of cooking during this crazy time. So I thought I would share tips and ideas of what we are doing in our home. Today, I'm thinking of my friend Dany as I soak my cantaloupe seeds in salt water. They are going to sit in there for a couple of hours and then I will rinse them and put them on a small bar pan. Slow roast at 250F until dry and crispy. Sooooo delicious!

So, I couldn't be with my girlies today on a weekend away 'cause I'm on call...so while waiting I thought I would keep busy by doing a couple of things in the kitchen. Granola is in the oven, bone broth is in the slow cooker and I'm hoping to make hummus, hot sauce, tomato sauce and pesto..Wish me luck!

It's leftovers at from scratch! I did a large ham, served with creamy, cheesy scalloped sweet potatoes, and red cabbage and onions. I had A LOT of ham left so I did linguine alfredo with cubed ham, kale and asparagus last night and tonight, it's ham and split pea soup. What do you do with your leftovers?

Let's face it...sometimes I get lazy..yup, I said it. Laaaaaazzy! That's why I love my slow cooker sooooo much. I can be lazy and it still looks like I've put great effort into a meal. My daughter requested lazagna this evening. SOOO much effort..right? So I used my slow cooker to take up the slack. It took 20 min and the sauce will be ready in 4 hours. I threw in most of the usual suspects...onion, garlic, carrots and celery. Followed by 1lb ground beef and squeezed the meat out of 6 mild italian sausages and chopped the meat with a spoon so it wouldn't have all those chunks. Next, a large can of diced tomatoes, equal amount of water, a little sugar and some oregano. Gave it a stir and put it on. You could add in some broken up lazagna noodles right there and then and really take the effort out but I'm going to do an assembley job later with some mozzerella, parm and cottage cheese...My Mum always used cottage cheese instead of ricotta and it's kinda stuck. Whaddya think?
