Salting and smoking fish has been a traditional way to preserve fish in coastal provinces. To make Salted Fish in Gilan, they lay the fish layer by layer in salt rock and use "rose madder" to add a nice red color to the fish. Late March to early spring is the best time for salting, and the fishes are ready to eat from June to July.

Salted fish is used as a taste. One or two pieces of it are washed with cold water and fried. We serve it with meals such as Bagala Qatooq, Torsh Tare, and Mirza Ghasemi.
