Our flash frozen dark leafy greens go from farm to freezer in 6 hours or less. We have freezers in our fields and the farms go back as long as 5 generations. Our greens are double washed, double chopped, double blanched then flash frozen. The greens can be used in any dish any time of the day - pair with eggs, pasta, soups, stews, sauces, stuffings, quesadila, bbq -- 1001 uses.

Try this amazing Mexican street salad for a refreshing and tangy treat called Esquites. This dish captures the essence of Mexican street food with a convenient twist. Perfect as a side dish, topping for tacos or as a dip with tortilla chips.

Ingredients:
• 3 cups Mexican Style Roasted Corn
• 1/2 cup mayonnaise
• 1/4 cup sour cream
• 1/2 cup cotija cheese, crumbled
• 1/4 cup cilantro, chopped
• 1/2 tsp chili powder
• 1 close garlic minced
• 1 juiced lime
• salt & pepper to taste
• lime wedges for garnish
• optional: hot sauce

Recipe:
• sauté the corn mix with water in a pan for a few minutes.
• Whisk mayo, sour cream, lime juice, minced garlic, and chili powder. Season with salt and pepper to taste. Adjust the spice level with hot sauce if desired.
• In large bowl, mix dressing and corn.
• Sprinkle cheese and cilantro over mixture and serve with sprinkle of chili powder and lime wedges on side.

Get your greens in with this appetising kale leaf stew with onions and garlic!

Ingredients:
Kale
Onion
Olive oil
Garlic
Water
Lemon

Recipe:
Chop up a red onion. Add 2 cloves of finely minced garlic.
Add kale without stems and add 1/2 cup water, cook for 5-10 minutes uncovered.
Add 1 cup water when pan is almost dry. Cook till greens are melt-in-your-mouth tender.
Season with lemon and optional Spanish sherry vinegar to taste if desired.
