PART 2 OF INSTANT POT MEALS

I had leftover daikon so I threw that in but I’d skip it

Serves 3-4
INGREDIENTS
1.5 lb rib roast
4 carrots
2 onions
3 celery stalks
1 tbsp tomato paste
1 tbsp dark soy sauce
2 cups wine
2 cups beef broth
1 bay leaf
Garlic powder
Salt and pepper
2 tbsp cornstarch
Water

STEPS
1. Slice rib roast into bite-sized pieces.
2. You can either add the meat directly into the Instant Pot or you can add it to a pan on medium heat and cook until all sides are browned (it doesn’t need to be fully cooked because we’ll be adding it into the Instant Pot to cook for longer).
3. Slice the carrots, onions, and celery into bite-sized pieces. Add them to the Instant Pot with the meat.
4. Then, add in tomato paste, dark soy sauce, beef broth, and red wine. Add a bay leaf, garlic powder, and salt and pepper.
5. Pressure cook for 45 minutes.
6. In a separate bowl mix together 2 tbsp of cornstarch with some water to create a cornstarch slurry.
7. Once done, release the pressure on the Instant Pot.
8. Add a cornstarch slurry (a mix of water and cornstarch) to thicken it and stir until the sauce thickens.
9. Serve over mashed potatoes.

INSTANT POT MAC

Serves 4
INGREDIENTS
4 cups water
450 g pasta
1 tbsp garlic
1/2 tbsp chili powder
4 cups of shredded cheese
3/4 cup milk
1/4 cup heavy cream
4-5 truLOCAL bacon strips
Spinach
Salt and pepper

INSTRUCTIONS
1. To an Instant Pot, add water, uncooked pasta, garlic powder, and chili powder. Mix together.
2. Cook on high for 4 minutes.
3. Release the pressure immediately after it’s done to avoid overcooking the pasta.
4. Mix the pasta and if there’s any excess water, that’s okay, it’ll be absorbed by the other ingredients. If you’re not adding other toppings, you can remove the excess water.
5. Add in milk, cream, and any toppings you like (I added truLOCAL bacon and spinach). Add the cheese in batches (1 cup at a time and stir).
6. If you want it creamier/cheesier, add more milk and cheese and necessary.
7. Season with salt and pepper to taste.

Taiwanese Beef Noodle Soup
Serves 6-8

INGREDIENTS
2 onions (peeled and sliced)
1.5 lb rib roast
2 daikon (peeled and chopped)
1 slice of ginger
2 carrots (peeled and chopped)
2.5 tbsp chili bean paste
1/2 cup soy sauce
1/2 cup cooking wine
2 tbsp dark soy sauce
4 cups beef broth
2 cups water
6 dried chilis
3 star anise
1 bay leaf
1 cinnamon stick
1 tbsp peppercorn
3 tbsp garlic power
Udon noodles

STEPS
1. Prepare your vegetables by peeling and chopping them into bite-sized pieces.
2. For the meat, you can use your cut of choice. I used a 1.5 lb rib roast. Trim off the excess fast and cut into bite-sized pieces. Season the meet with salt and pepper.
3. Turn your Instant Pot on the saute setting and add a bit of oil. Pour in your onions and let that cook for 5-7 minutes (or until brown). Then, add in the meat, daikon, ginger, carrots, chili bean baste, soy sauce, cooking wine, dark soy sauce, beef broth, water, dried chilis. Star anise, bay leaf, cinnamon stick, pepper corn, and garlic powder.
4. Switch the Instant Pot to the pressure cook setting and let it cook for 45 minutes.
5. Once done, let it rest for 20-30 minutes.
6. Boil your noodle of choice (I used udon) and serve with the soup.

SECOND HALF MARATHON 🥹

So grateful to get out yesterday and run Toronto Marathon

I was supposed to run this race in 2023 but found out I had a concussion 2 days before and had to pull out of the race

That was followed by 2 more car accidents and 3 more concussions which meant putting a pause on running

I was officially cleared to run in November 2025 and began winter training (which was just several months of the dreadmill lol)

Was super anxious all week but the vibes were high and I managed a 12 minute PB with 2:05:15!!

Super thankful to have been part of a great ambassador team at Toronto Marathon ❤️

TATER TOT BREAKFAST CASSEROLE

Serves 4-6
INGREDIENTS
1/2 bag of frozen toter tots (or enough to fill your baking dish)
6 eggs
6 strips of truLOCAL bacon
Splash of milk
Salt and pepper (or seasoning of choice)
1 pepper (or veggies of choice)
Cheese

STEPS
1. Cook your bacon to your liking.
2. Once done, pat dry with paper towel to remove some of the excess grease and then chop into small pieces. Set aside.
3. Grease a baking dish and pour in your frozen tater tots.
4. Dice your veggies.
5. Add your vegges and bacon on top of the tater tots (or you can also layer them in like a lasagna).
6. To a separate bowl, crack some eggs and add some milk and seasonings. Mix until everything is combined.
7. Pour the eggs over the tater tots and the other toppings.
8. Top with cheese.
9. Bake at 350F for 1 hour and 10 minutes (or less if your casserole isn’t as thick).
