Servings: 4
Ingredients
For the Crispy Chicken
2 boneless, skinless chicken breasts
Salt and black pepper, to taste
1 tsp Italian seasoning
½ cup all-purpose flour
2 large eggs, beaten
1 cup panko breadcrumbs
½ cup grated Parmesan cheese
2 tbsp olive oil
For the Alfredo Pasta
12 oz (340 g) fettuccine
2 tbsp butter
4 garlic cloves, minced
1½ cups heavy cream
1 cup freshly grated Parmesan cheese
Salt and black pepper, to taste
½ tsp Italian seasoning
Reserved pasta water, as needed
For Garnish
Fresh parsley, chopped
Extra Parmesan cheese
Instructions
Cook the fettuccine in salted boiling water until al dente. Reserve ½ cup of pasta water before draining.
Season the chicken breasts with salt, pepper, and Italian seasoning.
Dredge each chicken breast in flour, dip into the beaten eggs, and coat with a mixture of panko breadcrumbs and Parmesan cheese.
Heat olive oil in a skillet over medium heat. Cook the chicken for 5–6 minutes per side until golden brown and cooked through. Let rest for 5 minutes before slicing.
In a large pan, melt the butter and sauté the garlic until fragrant. Pour in the heavy cream and cook over low heat for 2–3 minutes.
Stir in the Parmesan cheese and Italian seasoning, whisking until smooth and creamy. Add reserved pasta water a little at a time if needed.
Toss the fettuccine in the Alfredo sauce until fully coated.
Plate the creamy pasta, top with sliced crispy chicken, and garnish with parsley and extra Parmesan.
Kitchen Tips
Use freshly grated Parmesan for the smoothest Alfredo sauce.
Don't let the cream boil—gentle heat keeps the sauce rich and velvety.
Add sautéed mushrooms or spinach for extra flavor and color.
For an extra crispy coating, double-dip the chicken in egg and breadcrumbs.
