North America leads in a global food allergy crisis. What I mean by that is that food allergies have been on the rise over the past decade.

I have to mention some of these stats….Over 3 million Canadians, approx. 7.5% of our population, are affected by food allergies, according to Food Allergy Canada.

Approximately 33 million Americans have at least one food allergy (and that’s 9.5% of the population, according to Food Allergy Research and Education).

This is our Food Allergy & Sensitivity Journey...

I'm Masha šŸ‘‹ and I live with multiple food sensitivities while raising a child with multiple food allergies.

It started when my son Sebastian was only 2 months old. We thought it was just ā€œEczemaā€ at first. Many infants/toddlers have it, so we didn’t think much of it. His symptoms included eczema, colic, frequent skin rashes and food reactions.

The real answers came once he started solids. Between 1-2 years old, my son was diagnosed with multiple Food Allergies which included Wheat, Egg, Sesame Seeds & Some Nuts.

As diligent parents, we thought we were prepared and well informed. But a single slice of Gluten Free cake at Sebastian's brother’s 1st birthday party (that unknowingly to us contained eggs) changed our entire outlook. Watching Sebastian have a terrifying food reaction turned our world upside down. We had to educate ourselves and our loved ones to be more aware of the hidden allergens around us.

Now, we check every label, ask the right questions, and never go anywhere without an EpiPen.

While managing my son's health, I was ignoring my own. For years, I lived with:

• Constant fatigue & brain fog
• Bloating & abdominal pain
• Stubborn acne
• Failure to thrive
• Weight gain (more recently)

In 2024 on a family vacation in Hawaii, I collapsed on the beach. This was my wake-up call to stop ignoring the signals my body was sending. After months of testing, I discovered I was iron deficient and have multiple food sensitivities.

We now live in an allergy-aware home where we learn how to thrive, not just survive.

Seeing my son grow up in a world filled with hidden allergens—while navigating my own sensitivities—is what drives me. That's why I'm building the community I wish I had.

I Tested 3 MORE Gluten-Free Flours with My Go-To Bread Recipe | Part 2 | The Results Surprised Me

I tested three popular gluten-free flour blends (Cloud 9 Gluten Free Gluten Free Bagel Mix, Duinkerken Bread Pain Mix, and XO Baking Co. - Gluten Free Baking Gluten Free All Purpose Flour) to see which one truly delivers the best texture, rise, and flavor for homemade bread.

This is the exact recipe I used for all three tests—simple, no yeast!

šŸ‘‡ Here’s the bread recipe I used to compare the flours:

Dry Ingredients:
2 ½ cups gluten-free flour blend
1 ½ tsp baking powder
½ tsp baking soda
1 tsp salt
2 tbsp psyllium husk powder

Wet Ingredients:
2 cups warm water (add 2-3 tbsp more if batter is too thick)
2 tbsp extra virgin olive oil
1 tbsp apple cider vinegar
1 tbsp maple syrup

I finally put 3 more flours to the test to see how they compare and let you know whether you should spend your money on them. I was definitely surprised by the results... and of course, my kids had some very honest opinions to share along the wayšŸ˜†
