A big, juicy, diner-style burger with crispy bacon, melted cheddar, fresh tomato, red onion, lettuce, creamy sauce, and golden fries on the side.

Ingredients

For 2 burgers:

2 burger buns with sesame seeds
350 g ground beef
4 slices bacon
2 slices cheddar cheese
1 tomato, sliced
1 small red onion, sliced
Lettuce leaves
2 tablespoons mayonnaise
1 tablespoon ketchup
1 teaspoon mustard
Pickle slices, optional
Salt and black pepper
1 tablespoon butter

For serving:

French fries
Ketchup or burger sauce

Instructions

Shape the ground beef into 2 thick patties. Season both sides with salt and black pepper.

Cook the bacon in a hot pan until crispy. Set aside.

In the same pan, cook the burger patties for 3 to 4 minutes per side, depending on thickness. Add cheddar cheese during the last minute and let it melt.

Toast the buns with a little butter until golden.

Mix mayonnaise, ketchup, and mustard to make a quick burger sauce.

Build the burger: bottom bun, sauce, beef patty with melted cheese, crispy bacon, red onion, tomato, lettuce, and top bun.

Serve immediately with hot fries and extra sauce.

A rustic sourdough loaf with a crisp golden crust, airy open crumb, deep flavor, and that beautiful bakery-style “ear” from proper scoring.

Ingredients

500 g bread flour
350 g water
100 g active sourdough starter
10 g salt

Optional:
1 tablespoon olive oil for a softer crumb
Rice flour or regular flour for dusting

Instructions

In a large bowl, mix the flour and water until no dry flour remains. Cover and let rest for 30 to 45 minutes.

Add the active sourdough starter and salt. Mix well until the dough comes together.

Cover and let the dough rest. During the first 2 hours, perform 3 to 4 sets of stretch and folds every 30 minutes.

Let the dough bulk ferment at room temperature for 4 to 6 hours, until it looks airy, slightly domed, and has increased in size.

Turn the dough onto a lightly floured surface. Shape into a round or oval loaf.

Place the dough into a floured banneton or bowl lined with a towel. Cover and refrigerate overnight, 8 to 14 hours.

Preheat a Dutch oven at 245°C / 475°F for 30 minutes.

Place the cold dough on parchment paper. Score the top with a sharp blade.

Bake covered for 20 minutes. Remove the lid and bake another 20 to 25 minutes, until deeply golden and crisp.

Let the bread cool completely before slicing.

The secret is patience. A strong starter, slow fermentation, and a cold overnight rest give you the best crust, flavor, and open crumb. Slice too early and you lose the texture. Wait, then enjoy.

Ingredients

For 4 chili cheese dogs:

4 hot dog buns
4 beef hot dogs
1 cup shredded cheddar cheese

Yellow mustard
Pickle spears
French fries, for serving

Quick beef chili

300 g ground beef
1 small onion, finely chopped
2 cloves garlic, minced
1 cup tomato sauce
1 tablespoon tomato paste
1 teaspoon chili powder
1/2 teaspoon smoked paprika
1/2 teaspoon cumin
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon sugar, optional
1/4 cup water or beef broth

Instructions

Cook the ground beef in a skillet over medium heat until browned. Add the chopped onion and garlic, then cook for 2 to 3 minutes.

Stir in tomato sauce, tomato paste, chili powder, smoked paprika, cumin, salt, pepper, sugar, and water. Simmer for 15 to 20 minutes until thick and rich.

Grill, pan-sear, or boil the hot dogs until hot and lightly browned.

Warm the buns, then place one hot dog inside each bun.

Top generously with chili, shredded cheddar, diced onions, and yellow mustard.

You can also air-fry them at 200°C / 400°F for about 20 to 25 minutes.

Instructions
