Our Mermaid Treats are Having a Moment

Over the past few weeks a crowd-favourite has emerged. We love all of the products we sell, but our Mermaid Lemonade Candy has been on the tip of our customers tongue all summer. Why? It is a vibrant representation of Vancouver Island wild foraged and cultivated botanicals. A delicious balance of floral notes and bright citrus, this top-selling candy inspired our versatile mermaid syrup. Both are a fun blend of wild roses foraged in Ucluelet, and deliciously fragrant English lavender that is cultivated by our friends at Bilston Creek Farms in Metchosin. The great thing about spending our summer speaking with customers from all over the world has been the discovery of new uses. Our syrups were designed for cocktails, mocktails, and sodas. We’ve heard stories from people of all ages mixing delicious sodas, zero-proof customers raving about the flavour and ease of use, and cocktail fanatics mixing up delicious whisky sours and bourbon lemonades. Our favourite distilleries have been mixing up all manner of cocktails, such as Holocenes delicious smoked vodka margarita with mermaid syrup and our spruce tip rim salt. And lastly, the fun, surprising factor has been the discovery of new use cases; folks using our syrups in vinaigrettes, on yoghurt, on ice cream, in lattes, and on pancakes.

We love the creativity! And, we love that our products are now been enjoyed by folks as far away as Argentina, Denmark, England, Israel, Germany, Mexico, Singapore, Switzerland, Turkey, and the USA. Thank you for the support!

So, here’s the thing. We think that Caesar’s leave a lot of room for improvement. A pretty big reason is the presence and suspect provenance of clam juice. Another is the overly gritty/pulpy texture of conventional tomato juice. As it turns out, our repertoire of BC seaweeds fill the gap quite spectacularly.

The Poseidon Cocktail

This one has been cooking since we started making syrups. It locked into place quite recently with new spirit tastings from this region. The perfect balance being key, it’s roasty-toasty, smooth, sweet, and bright, with a fun crackle of heat on the finish. We’re using a combination of Romero dulse and Naas Foods smoked kelp and a delicate blend of spiced veggies for an absolutely refreshing blast of salinity and umami.

2 oz Holocene Distilling Project smoke eater vodka
1.5oz seajou.ca Poseidon Syrup
0.5oz lime juice

Salt rim with seajou.ca Safe Harbour seasoning and garnish with ForestForDinner pickled sea asparagus.

After spending time on southern Vancouver island, we returned to Ucluelet with a palate for two new spirits that are polar opposites, but delicious and usable in similar ways; Holocene Distilling Project’s Smoke Eater and Ryes & Shine Distillery’s Don’t Go Bacon My Heart. We were inspired by these lovely spirits and their makers.

The result with either spirit is a refreshing take on the Canadian classic, instead of a Caesar, it’s a delicious sensorial gift from Poseidon’s vast, deep sea.

Inclusion and equity have been a part of Evalina Goods since we began, and it’s one of the reasons why we became Tla-o-qui-aht Tribal Parks Allies before starting out. But, today I’m here to talk about smaller-scale accessibility that is core to how we came up with our Seajou™ plant-based candy. Years ago, when speaking with my brother and his family, they shared the difficulty they had finding vegan candy to enjoy. Their kids are super smart and research minded, so they set out to investigate options that did not contain animal products. Turns out, there were not many out there!

When we created Evalina Goods there were a few target products we started developing. Candy wasn’t in the initial list. But, the words of these kiddos rattled around in my head until the recipes clicked into place. Early prototyping in January quickly turned into a viable product range that we launched in June. As it turns out, it’s very easy to create joyful things when you hold the needs and values of customers in focus. The result is a delicious plant-based candy that a wide range of folks can enjoy.

The “why” behind me writing this today is that yesterday, my niece and nephew visited a market in Tofino to help me sell the candy they inspired. Words cannot really contain the joy I felt when describing this product development journey to guests, gesturing to my niece and nephew, and hearing people ask their favourite flavours. Innovation doesn’t always come around full circle as clearly as this example. Not all change is big, sweeping, and dramatic. Oftentimes a solution is hiding in plain sight and listening can create ease. It means a lot to me that these kiddos felt heard, it means a lot to integrate their words and dietary needs to create a product that made them smile. To me, that’s magic!

We launched our lineup of Seajou products eight weeks ago. It has been delightful to interact with guests on the coast, to hear their excited reactions when tasting our products, and to see repeat customers trying new products or purchasing more of a loved flavour.

This past week we’ve been on a road trip. We’ve dedicated the summer to literally meeting our customers where they are and it has been wonderful to expand our audience. Last week we were in Vancouver and now we’re back on Vancouver Island. Until Sunday, you can find us at Bilston Creek Farm (Bilston Creek Farm | Victoria BC) for their lavender festival. It’s a fun homecoming as two of our products proudly feature their estate-grown lavender; Mermaid Lemonade Candy and Mermaid Syrup.

Both of these products are an example of our goal to introduce folks to the blend of terroir and merroir. If you’re not familiar with merroir, it’s an emerging term related to flavour development in marine environments. It’s most commonly attributed to shellfish growing where skilled farmers can tune the flavour of a product based on environmental factors. Like terroir, we believe that growing substrate, minerality, wildlife interactions, wave action, and other growing conditions affect the flavour of marine plants. We’ve already demonstrated that the same species of seaweed can exhibit unique flavour characteristics based on where it has grown. It’s fascinating, and delicious.

We’ve wanted to visit Six Cats Distillery since learning about it through a Revival Stillworks installation photo. Yesterday, it was lovely to chat with owner David, learn his story, sample the core offering, and peek at what’s coming up next. WATCH THIS SPACE. After opening in April, they’ve been very busy, and so has that beautiful Revival Copper Still.

Their offering is comprised of Patapouf’s Apple Spirit and Sophie’s Gin. Both are great products. The Gin is clean, balanced, with a great mouthfeel. David is making cuts from this still with precision, “I’m a geophysicist”, he responded after I stated, “You must have a background in chemical engineering.” Their product is a great sum of scientific rigour and purpose, from lived experience.

Their Patapouf’s Apple Spirit (Brandy) is what initially drew me through the door after seeing the still. It’s a fun new make spirit. It’s good now, and has a lot of headroom based on some of the ideas David spoke about in the distillery. Okanagan apples are the current base and he has long term plans to integrate locally-sourced apples from Squamish and the lower mainland. It’s a delightfully bright orchard on the nose, with a subtle background of grassy meadow. The body is surprisingly round, viscous, and smooth, with an initial punch of sweetness, carrying into their charred oak and baking spice on a short finish. There is a nice roar reminiscent of tequila and rye in the finish, and it got my brain whirring on ideas to honour it.

The “Laurie Wants a Margarita” Cocktail

2oz Six Cats Distillery Patapouf’s Apple Spirt
3/4 oz Sons Of Vancouver Distillery quad sec
3/4 oz lime juice
1/2 oz Seajou Mermaid Syrup

Shake ingredients over ice into a chilled rocks glass, garnished with Seajou Spruce Tip salt and a line wheel.

A few weeks ago, my mother-in-law saw our Mena Margarita recipe and commented, “I want a margarita”. Tasting this lovely spirit gave me a reason to tweak a fun, okanagan and island botanical take on the classic Margarita. Why? After tasting the finish, it occurred to me that our lavender-wild rose syrup was the right pairing to open up the flavour.
