It’s always a little sad saying goodbye to onion flowers until next season.

These delicate, crisp florets bring a unique flavour to our charcuterie boards, starting with a subtle sweetness and aromatic freshness before finishing with a peppery kick.

But their season is far too short.

They’ve disappeared from our boards once again, but not before reminding us why we look forward to them every year. Rest assured, next season’s arrival is already marked on our calendar. 🌿

Tawnshi Charcuterie was thrilled to make its debut at the annual Tourism & Events Industry Open House at The Polygon Gallery in North Vancouver.

Inspired by the season and the gallery’s vibrant spring exhibition by artist, curator, and scholar Tania Willard, this year’s event embraced the theme, “Life in Colour” — a celebration of creativity, connection, and the power of shared experiences.

As part of our Activation Station, we presented two modern Indigenous canapés that reflected our approach to contemporary Indigenous cuisine: thoughtfully crafted, locally inspired, and designed to spark conversation.

Jellied cedar, brie, walnut, and baked bannock

🐟 Sockeye Salmon Mousse
Sea asparagus and parmesan bannock crisp

Events like these are a wonderful reminder that food can be more than nourishment—it can be a story, a conversation starter, and a connection to culture and place.

Thank you to everyone who stopped by to sample our creations and learn more about modern Indigenous catering. We look forward to creating more memorable culinary experiences for corporate events, conferences, receptions, and gatherings across Vancouver and beyond.

Pickled fiddleheads are a delightful discovery on our modern Indigenous charcuterie boards.

Fresh and slightly earthy in flavour, fiddleheads are often described as a mix between asparagus, green beans, and broccoli stems. These coiled young fern fronds are harvested in early spring from riverbanks and woodlands, and have been gathered for centuries as an important nutrient-rich food source.

On our charcuterie boards, they add a bright, tangy bite and a connection to traditional Indigenous food gathering practices, bringing something authentic and unexpected to the table.
