Saturday morning just got even better with this delicious Just Egg and Daiya breakfast sandwich!

Daiya x JUST Egg Breakfast Grilled Cheese

Ingredients:
2 tbsp. plant-based butter
2 slices of bread
½ cup JUST Egg
2 Daiya Cheddar Style Slices
½ ripe avocado, mashed
Sea salt and freshly ground pepper, to taste

Butter each slice of bread. Melt one tablespoon of butter in a large frying pan on low heat.

Tilt pan to coat with butter, and pour in the ½ cup of JUST Egg, or enough to completely cover the bottom of the pan.

Place the unbuttered sides of the bread face down on the egg in the pan, with the bottom edge of each slice placed side by side. Allow the egg to cook until it is set, about 2 minutes.

Once the eggs are cooked, flip the eggs and bread over with a spatula like a pancake. Fold in any extended egg onto the bread.

Place the Daiya Cheddar Style Slices over each slice of bread. Cover the pan with a lid and keep cooking to allow the cheese to melt and the bread to get toasty.

After 2-3 minutes, uncover pan and top one side of the sandwich with mashed avocado. Season the avocado with salt and pepper.

Close the sandwich and transfer to a board. Slice the sandwich in half and enjoy!

One of your favorite appetizers just got better! This recipe for perfect Totchos, aka “tater tot nachos”, was easily veganized with the help of Daiya Cheddar Shreds. Just top with your classic nacho favorites, like black beans, avocado, and tomato, generously pour on our cheddar shreds and bake.

Garnish with lime wedges, cilantro, and cashew cream (or plant-based sour cream), or switch it up to your liking. It’s a fun, delicious, and shareable dish that’s perfect for game day, movie night, or our favorite, an easy Thursday dinner. Enjoy!

Servings 1 to 2
Prep time: 15 minutes
Cook time: ~15 minutes
Ready in 30 minutes

Ingredients:
1 bag of frozen tater tots (32 ounces)
1 can of black beans (15 ounces), drained and rinsed
1 cup of Daiya Cheddar Style Shreds
1 avocado, diced
⅔ cup diced tomato
A dollop of cashew cream
1 tablespoon minced cilantro
Lime or lemon wedges, for garnish

Directions:
Place the tater tots topped with Cheddar Style Shreds on a baking sheet and prepare as instructed on the tater tots package.

After baking, top them with black beans, avocado, tomato, cream, cilantro, and lime or lemon wedges for garnish.

No goals? Perhaps easier said than done, with all the external and internal pressure to change under the guise of “self-improvement” but it just means to show up in ways that just end up feeling wrong. New Year after New Year, app purchase after app purchase, meal plan after meal plan, resolution upon resolution. There’s nothing that needs to be “changed” except a release from this pressure to be someone we don’t need to be. Could 2023 be a year of grace, empathy, and compassion for ourselves, who are so often the recipient of our hardest blows, and to others, who need this tenderness just as much? Yes. Absolutely. No goals. Just kindness. Happy 2023!

Cocktail O’clock!
It’s time to imbibe! This pretty martini has a side of dessert, which should be a requirement of all cocktails, in our humble opinion. This recipe makes two cocktails to help ring in the New Year and can be made into a mocktail so everyone can have a fancy drink, too! 🍹 🥂 🎉

🍓 Strawberry Martini🍸

2 oz. vodka or non-alcoholic alternative
3 oz. Triple-Sec liqueur or non-alcoholic alternative
1 oz. fresh lime juice
1/2 oz. strawberry syrup
2 strawberries
2 tbsps Daiya Plain Cream Cheeze Style Spread
2 lime wheels

Cut the green tops off of each strawberry. Use a small paring knife to hollow out some of the strawberry centers. Pipe Daiya Plain Creamy Spread into the center of each strawberry. Slice into each strawberry 1/4 of the way up from the bottom and place onto the rim of each cocktail glass. Fill a cocktail shaker with ice. Add vodka, triple sec, lime juice, and strawberry syrup. Shake vigorously and pour into each glass. Garnish with a skewered lime wheel. Cheers!
