The Black Sesame Ep. 3: Wiggle, Wiggle Cream & Jelly
We’ve combined the bold, nutty richness of Superior Natural Black Sesame Soy Drink with a delicate, "wiggly" sesame jelly and a touch of savory sea salt cream.
The Ultimate Silky Black Sesame Jelly Drink
Ingredients:
A. Black Sesame Jelly:
250ml Superior Natural Black Sesame Soy Drink
5g Sesame Powder(Enhance color and aroma)
5g Gelatin powder (or Agar-agar)
10g Sugar (optional, adjust the sweetness to your liking; the Black Sesame Soy Drink is already slightly sweet.)
B. The Base:
250ml Superior Natural Black Sesame Soy Drink (chilled)
C. Sea Salt Cream Foam:
50ml whipping cream
50ml Superior Natural Sweetened Soy Drink
A pinch of Sea salt
10g Sugar
Instructions
Prepare the Black Sesame Soy Jelly (Recommended to prepare the night before):
Whisk together the sifted black sesame powder, gelatin powder, and 250ml of Black Sesame Soy Drink until smooth and well combined.
In a small pot, combine the whipping cream and sugar. Heat over low heat until the sugar is fully dissolved (approx. 60°C; do not let it boil).
Remove from the heat, pour the mixture into a container, and refrigerate for at least 3 hours, or until completely set.
Make the Sea Salt Soy Cream Foam:
In a chilled mixing bowl or frother, combine the whipping cream, Sweetened Soy Drink, and a pinch of sea salt.
Using a hand mixer or milk frother, whisk the mixture until it thickens into a soft, velvety foam. You want it to be thick enough to sit on top of the drink but still light enough to pour slowly.
Note: Do not over-whip into stiff peaks; keep it silky and pourable.
The Assembly:
Gently place the black sesame jelly at the bottom of the glass.
Pour in the chilled Black Sesame Soy Drink.
Top it off with a thick layer of the Sea Salt Cream Foam.
Garnish with a sprinkle of black sesame powder for that final Superior touch.
