ECHO BAY — OKANAGAN FALLS, BC

On the eastern shore of Skaha Lake is Echo Bay, a small family farm planted on southwest-facing silty loam and glacial gravels. Kelsley Rufiange farms holistically without synthetic inputs, building soil through cover crops, compost, plant ferments and biochar. In the cellar, native fermentations and long élevage keep the focus on the vineyard.

Maria and Alexander Koppitsch farm 5.5 hectares around Neusiedl am See, between Lake Neusiedl and the eastern end of the Leitha Mountains. Their family has grown grapes here for generations; today Maria and Alex farm biodynamically and do the vineyard and cellar work by hand.

Wild fermentation, no temperature control, unfined and unfiltered. Small-scale w**es shaped by the sand, gravel, limestone and clay around the lake.
