The water decides before we do.
In Huila and Tolima, we pick by hand. Only the red cherries, the ones that are truly ready. The green ones wait another day.
But ripe is not the whole story. Some cherries look perfect and are hollow inside. So on the same day they come off the plant, the whole harvest goes into the tank.
The light ones float. The dense ones sink. We pull out everything that floats and keep only what sinks.
Less density means less sugar, less of what you taste in the cup. A cherry can fool the eye. It cannot fool the water.
That is how the coffee starts. For green samples or a container to Canada, the US, or Europe, write to us. You will speak direct to the family.

Most people drink coffee with no idea of the work behind it. The picking by hand, the days of drying in the sun, the women sorting it bean by bean.

We want you to see it. Because once you see it, you understand what you are paying for, and why it tastes the way it does.

In a few weeks I will be in Brussels for World of Coffee, June 25 to 27.
My family has been growing coffee in Colombia for four generations. Now I am the one bringing that work to Europe.
I want to talk. About our own farms in Huila and Cundinamarca. About the families we work alongside in Tolima and Sierra Nevada, the ones who hand-pick the cherries and know each lot by name. About what it actually means when a coffee comes direct from the people who grew it.
