We hope everyone had a beautiful holiday weekend and found some joyful time with loved ones 💛
Here in Vancouver, the sunshine showed up in full force… and with it, the first sunburns of the year 😅
And you know what apparently helps soothe a sunburn? Potato juice.
Which feels like the perfect excuse for a potato appreciation moment.
The humble spud is one of the most widely eaten vegetables on the planet, yet it rarely gets the love it deserves. Reliable, nourishing, and deeply rooted in food cultures across the world, potatoes are a true staple of food security.
And here in Western Canada, we are spoiled! The Pemberton Valley is known as one of the best regions in North America for seed potatoes, thanks to its geography and natural isolation that helps keep crops disease resistant.
Right now though, we are in that fleeting window. Local storage potatoes are starting to wind down before the early summer harvest begins.
So let’s celebrate them while we still can.
