Did you know that the first written mention of kvas dates back to the year 989?
Kvas is an ancient traditional Russian drink that has always been consumed by the whole nation, regardless of wealth or class. It can be drank daily, as well as for special occasions and celebrations. Russians also used to consider it healing and give it to seriously ill people.
The accidental discovery of kvas belongs to the farmer Solodkin. One day, the grain stored in his barn became wet. In order to dry it out, Solodkin spread it out in the sun. The combination of heat and moisture led to the grain sprouting. Solodkin then decided to grind it into flour that he then tried making dough from. Attempts to bake it failed - the resulting flatbreads turned out sour and half-baked. Solodkin soaked the prepared dough in water, hoping that would remove the sour taste. A couple of days later, the mixture turned into tasty fermented water. This was the first kvas.
Kvas was produced by citizens all over Russian cities and villages. It also eventually started being prepared on an industrial scale. There were breweries built specifically for it. The fermentor, or kvasnik, profession was considered honourable. Kvasniks experimented with the drink, adding pears, apples, mint, pepper, and other fruits and herbs to it.
There were more than a thousand recipes for making kvas in Russia. The basis consisted of grains: millet, oats, rye, and barley. Kvas used to be kept in wooden barrels. The traditional way to drink it was in combination with eating radish, rye bread, and green onions.
