My name is Connor Dickson and I have recently launched a mobile butcher business for on-farm slaughter and meat processing in the Huron, Bruce and surrounding areas of Ontario.
I have a passion for butchering all types of meat and I mainly specialize in the processing of beef, pork, and wild game.
On-farm slaughter and processing is done by humanely euthanizing the animal and then going through the skinning and hanging process, with the use of equipment on the farm capable of lifting the animal such as a loader, and a water hose hook-up for washing. The carcass then gets quartered and transported into my processing trailer to be cooled and then processed another day.
My mobile processing trailer is a fully insulated cooler trailer with all the equipment needed for quality processing of all types of meat. It requires electrical hook up for the cooler and trailer and the disposal of all waste materials.
I am able to turn your meat into anything you desire, including roasts, steaks, ground burger, stew, etc. I also can make patties and sausage.
For packaging, I offer paper wrapping, poly bags and vaccum sealing. The vaccum sealing is especially beneficial if you are looking to have beef steaks and roasts made. A process called wet aging can be done via vacuum sealing these cuts and are kept in your fridge for the aging period.
Laws and regulations are in place for on-farm slaughter and processing by a butcher, but this meat cannot be sold or leave the farm under any conditions.
A lot of my business is around emergency slaughter of cattle and pigs. If there is an animal injured you can call or text us and we will arrange to be there as soon as we can.
