🍾Monzio Compagnoni is a dynamic Franciacorta winery based in a restored 15th-century farmhouse, combining modern winemaking expertise with a strong respect for local tradition to produce elegant, characterful sparkling wines.

🫢This vintage Franciacorta is made in the same way that Champagne is made, and spends a whopping 40 months on its lees! This is longer than the basic requirement of vintage Champagne!

▪️This week's Wine School Wednesday focuses on the general theory of a wine's aging potential!

▪️On of the most common questions in wine is CAN a wine evolve. To further this question, another question is if we WANT the wine to age. Do we enjoy the flavours of an aged Riesling more than a more youthful style?

▪️But what makes a wine capable of aging? Certain wines possess the structure needed for successful/positive evolution over time. The key components that contribute to ageability are acidity, tannin, flavour concentration, and sweetness - as long as these components are in balance with each other!

✨Acidity acts as a wine's backbone, helping preserve freshness and vitality as it matures.
✨Tannins provide structure and gradually soften over time, contributing to greater complexity and texture.
✨Flavour concentration ensures there is enough depth and intensity for the wine to develop new layers of character as primary fruit flavours evolve.
✨Sweetness contributes to ageability because residual sugar acts as a preservative, slowing oxidation and helping maintain the wine's structure over time.

▪️It's also important to recognize that not all wines are intended for long-term cellaring. Modern winemaking increasingly focuses on producing wines that are approachable and enjoyable upon release.

▪️The goal of aging is not simply longevity, but rather a positive evolution. The best age-worthy wines transform over time, developing greater complexity, nuance, and character while maintaining balance from start to finish!

⬇We have another exciting event coming up with a special guest!

✨Join us for an elegant and refreshing evening celebrating the beauty of Provence rosé.

🇫🇷 This event will be guided by Figuière brand ambassador Ellen Jakobsmeier, who is visiting us from France! You’ll explore one of our favourite Provence producers through an intimate and guided tasting experience. Enjoy thoughtfully paired small bites alongside a selection of vibrant, expressive rosés perfect for summer.

⭐ Ellen Jakobsmeier is a Toronto-born and raised Sommelier / Exporter who has worked for France-based wine export company Genuine Wines since 2017, after graduating from her Masters in Wine Business at the Burgundy School of Business, in Dijon, Burgundy, France. She started her full-time wine career working two vintages (2010 & 2011) as a cellar hand in McLaren Vale, Australia, with her last vintage in Marlborough, New Zealand in 2012.

👌After returning to Toronto, Canada, Ellen received her CMS and CAPS Sommelier certifications in 2013, and worked as a Sommelier and Beverage Director in some of Toronto’s top fine dining restaurants. She has proudly been sharing the fine rosé wines of Figuière Provence throughout North America and Scandinavia for the past decade.

When not travelling among French and Italian wine regions, visiting export markets or hosting tastings, Ellen lives in the winemaking village of Sancerre, France with her baby boy.

🍷This is a chance to relax, learn, and savour the flavours of Provence in a warm, welcoming setting.

🍷For this week's Wine School Wednesdays, we will talk about chillable reds! Just in time for summer! 🌞

☝There is a common misconception that all reds should be served at room temperature. That is not the case!

🧐Some red wines benefit from chilling while others are better served warmer because of how temperature interacts with the wine's structure, aroma, and perception.

⭐️Lighter-bodied reds tend to have lower levels of tannin, alcohol, and extraction. When slightly chilled, typically around 13–16 C, the cooler temperature helps tighten its structure and lift its natural acidity. This makes the wine feel perceived as fresher, more vibrant, while also softening any impression of alcohol. Aromatically, chilling can focus the fruit and floral notes, making them feel more precise rather than overly soft or diffuse.
