The Sapsucker Birch Syrup Company started in 2010 when founders Craig Scott and Mike Mitchell were unable to 'found' any maple trees in the Territories. Since that time, and with permission of Yellowknives Dene First Nation, they have been tapping birch trees just outside of Yellowknife. We bottle different 'vintages' based on changing sap chemistry over the course of a season (Early Harvest, Late

Harvest, Later Harvest, Leaf Syrup) each with different characters and different uses. We also make Traditional Recipe and Birch/Maples blends. Message us to get a list of local retailers or just whistle Craig or Mike down in the street.
