Unbelievable how time really really flies when you have children, it's incredible my little baby is already a year old.

I have decided she would have a rainbow themed cake probably some six months ago, when it was cold and I didn't take into account that we would be on vacation with 30+ degrees. So, the rainbow was supposed to be standing, but it melted in the heat😱😭 and I had to improvise. Well, it still turned out pretty nice I'd say.

It's a so called double-decker cake. Top is vanilla genoise, one layer of crème pâtissière and fresh mango and one layer crème pâtissière+mascarpone and a mango insert. For the bottom part I chose chocolate génoise, two layers of chocolate crème pâtissière+mascarpone with a chocolate sour cream insert and one layer with only chocolate crème pâtissière. It practically disappeared 😋🍫

Let's forget about the cold and the wind, this one is a real spring announcer with its flowers and warm colors 💐🌸🌸😊

The génoise is vanilla - cocco, and the filling is sweet, but so delicate. Fresh raspberries, perfectly whipped white ganache and the silkiest, creamiest passionfruit curd 😋😋😋

Trying to bake with a little baby at home is very challenging, but fortunately I manage to find more and more time for my creations as the little one grows 😊 And it's during this period that I invented this delicious cake that doesn't require a lot od time to be prepared. Just chocolate génoise (which can be prepared im advanced and stored in the freezer), chocolate mousse and dark chocolate ganache. And a sprinkle of dried raspberries. Absolutely fabulous 😋😋😋

I'm back 😎 I somehow managed to make this all-strawberry delight with a three weeks old baby at home, quite a crazy decision 😁
Nonetheless, the cake was great as I heard 😜 you can't get it wrong with this great classic - vanilla génoise, crema pasticcera and fresh strawberries 🍓🍓😋
