Creamy Baked Macaroni & Cheese (American comfort classic)
Ingredients (serves 4–6)
12 oz (340 g) elbow macaroni or small pasta
3 tbsp unsalted butter
3 tbsp all-purpose flour
2 ½ cups milk (whole milk preferred)
1 cup shredded sharp cheddar
1 cup shredded mild cheddar or Colby jack
½ tsp salt, ¼ tsp black pepper, pinch of nutmeg (optional)
1 cup panko or breadcrumbs + 1 tbsp melted butter for topping (optional)
Equipment: pot, whisk, baking dish, oven
Steps
1. Preheat oven to 350°F (175°C). Cook pasta 1–2 minutes less than package directions until very al dente; drain and set aside.
2. In the same pot, melt 3 tbsp butter over medium heat. Stir in flour and cook 1–2 minutes to make a roux.
3. Slowly whisk in milk, a little at a time, until smooth. Cook, stirring, until sauce thickens and coats the back of a spoon (4–6 minutes).
4. Remove from heat. Stir in cheeses until melted and smooth. Season with salt, pepper, and nutmeg.
5. Fold in drained pasta, pour into a buttered baking dish. Mix panko with 1 tbsp melted butter and sprinkle on top (optional).
6. Bake 20–25 minutes until bubbly and golden. Let rest 5 minutes before serving.
Tips: For extra creaminess, substitute ½ cup cream for part of the milk or add a spoon of cream cheese. Swap cheeses to taste (Gruyère, fontina).
