Creamy Baked Macaroni & Cheese (American comfort classic)

Ingredients (serves 4–6)

12 oz (340 g) elbow macaroni or small pasta

3 tbsp unsalted butter

3 tbsp all-purpose flour

2 ½ cups milk (whole milk preferred)

1 cup shredded sharp cheddar

1 cup shredded mild cheddar or Colby jack

½ tsp salt, ¼ tsp black pepper, pinch of nutmeg (optional)

1 cup panko or breadcrumbs + 1 tbsp melted butter for topping (optional)

Equipment: pot, whisk, baking dish, oven

Steps

1. Preheat oven to 350°F (175°C). Cook pasta 1–2 minutes less than package directions until very al dente; drain and set aside.

2. In the same pot, melt 3 tbsp butter over medium heat. Stir in flour and cook 1–2 minutes to make a roux.

3. Slowly whisk in milk, a little at a time, until smooth. Cook, stirring, until sauce thickens and coats the back of a spoon (4–6 minutes).

4. Remove from heat. Stir in cheeses until melted and smooth. Season with salt, pepper, and nutmeg.

5. Fold in drained pasta, pour into a buttered baking dish. Mix panko with 1 tbsp melted butter and sprinkle on top (optional).

6. Bake 20–25 minutes until bubbly and golden. Let rest 5 minutes before serving.

Tips: For extra creaminess, substitute ½ cup cream for part of the milk or add a spoon of cream cheese. Swap cheeses to taste (Gruyère, fontina).

Classic American Cheeseburger

Ingredients (makes 4 burgers)

1 lb (450 g) ground beef, 80/20 blend

Salt and black pepper

4 burger buns

4 slices cheddar cheese

1 tbsp vegetable oil or butter

Optional toppings: lettuce, tomato slices, red onion, pickles, ketchup, mustard, mayo

Equipment: skillet or grill, spatula, meat thermometer (optional)

Steps

1. Divide beef into 4 equal portions (~4 oz/115 g each). Gently form patties about ¾" (2 cm) thick, slightly larger than the buns. Don’t overwork the meat.

2. Season both sides generously with salt and pepper.

3. Heat a skillet or grill to medium-high (around 375–400°F / 190–200°C). Add oil if using a skillet.

4. Place patties on the hot surface. Cook 3–4 minutes without moving to form a crust.

5. Flip and cook another 2–3 minutes. Add a slice of cheese to each patty, cover or tent with foil for 30–60 seconds to melt. Cook to internal temp 160°F (71°C) for well-done (or 145–155°F if you prefer medium, following safety preferences).

6. Toast buns face-down in the skillet for 20–30 seconds until golden.

7. Assemble with toppings and sauces. Serve hot.
